I like this one dried apricot cake because of how little sweet it is. If you have a sweet tooth, it may seem somewhat bland but I find it ideal for children, especially for the little ones.

It only has 50g of cane sugar and the dried peaches they give you that extra flavor you need. The rest of the ingredients are the usual ones: eggs, flour, oil and, in this case, milk and yogurt. Both milk and yogurt can replace them for vegetable milk and soy yogurt if you have an intolerance at home.

Dried apricot cake, perfect for children due to its mild flavor and the ingredients it contains.

Ingredients

8 dried apricots
3 eggs
50 g of cane sugar
150g milk
100 g of sunflower oil
125 g of yogurt
200 g flour
8 g of yeast type Royal
The zest of 1/2 lemon

Preparation

We put the apricots in the glass and program 5 seconds, speed 6. We take out and reserve.
We fit the butterfly on the blades. We put the egg whites and assemble them in speed 3 1/2 for about 3 minutes. We take out and reserve in a large bowl.
Still with the butterfly on the blades, add the yolks and sugar into the glass. We program 2 minutes, speed 3.
Add the milk, oil and yogurt and mix everything: 8 seconds, speed 3.
We remove the butterfly. Add the flour, yeast and grated lemon peel. We program 10 seconds, speed 4.
We pour the mixture into the bowl where we have the whites to the point of snow and we mix everything, delicately, with the spatula. We add the dried apricots that we had chopped at the beginning and we mix again, always delicately.
We put the mixture in a mold of about 24 cm in diameter.
Bake at 180º for 40 or 45 minutes, until you see that it is cooked inside (you can check it with a skewer stick).

Notes

As it contains dried apricots, it is important to only give it to children who are used to eating food in pieces.[br]It is recommended to store it in the refrigerator.
