We continue with our homemade cookies. Today's are lemon, tiny and varied: depending on how we coat them before putting them in the oven they will have one color or another.

The white ones are coated with white sugar and powdered sugar. The dark ones, with sugar blanquilla and bitter cocoa powdered.

I encourage you to read the preparation section so that you can see what is done in a moment. In addition, being about 15 g each, they spread a lot.

Easy, simple, and without the need to use molds. The little ones can give us a hand in the kitchen when preparing them.

Ingredients

  • 100 g butter at room temperature
  • 85 g brown sugar
  • 1 egg
  • 1 pinch of salt
  • The grated skin (only the yellow part) and the juice of an organic lemon
  • 280 g flour
  • 20 g cornstarch
  • 1/2 envelope of baking yeast

And to coat:

  • White sugar
  • Powdered sugar
  • Bitter cocoa powder

Preparation

  1. We fit the butterfly on the blades of the glass. We put the butter and sugar. We program 3 minutes, speed 3.

  2. We program speed 3 and, without programming time, we add the egg and the salt. We also incorporate, at that speed, the juice and the lemon peel.

  3. We remove the butterfly of the blades. Add the flour, cornstarch and yeast. We program 1 minute, spike speed.

  4. With our hands we make balls of dough of about 15 g each. We coat them with white sugar and then in icing sugar or powdered chocolate. We can make half of one type, with icing sugar, and half of another, with cocoa.

  5. We are placing them on two baking trays (covered with baking paper) leaving space between them.

  6. We bake at 180 for approximately 12/15 minutes.

Notes

We can start the recipe by grating the lemon skin (only the yellow part) at a high speed.
