Mexican macaroni

I still remember how reluctant I was as a young girl to try new foods. My boyfriend, at that time, told me that we were going to have dinner at his brother's house, who was going to prepare Mexican food. At first I made a strange gesture, I thought about bringing a good dessert and so, if I did not like it very much, then I would not go hungry with the sweet. I was wrong. Prepared a delicious themed dinner with their nachos, its guacamole and its burritos… It was all delicious, and I barely had room to have my dessert.

Since that day I love to prepare my mexican dinners and more if it is in the garden as friends or family, it is enjoyed a lot.

This recipe dazzled me with its name but as I read it I liked it more. It is so simple to prepare that there is no one to resist, in 20 minutes I had my food ready. With all the ingredients in the glass and voila!

All we need is a pack of prepared for fajitas. I bought it at Mercadona in the frozen ones, it has onion, green and red peppers and chicken. It also has a sachet of seasoning that must be added to the recipe. This preparation must not be defrosted. I recommend that you also add a little salt, because with the water and the tomato, even if it has the seasoning it needs it for my taste.

    what is fajitas?

    1.    Silvia said

Marga, fajitas are one of the most traditional dishes in Tex-Mex cuisine. It consists of minced and grilled meat served on a corn flour tortilla. Originally they were made only with beef; nowadays they have become popular with pork, chicken (Chicken fajita), etc .; In some restaurants the meat is roasted along with peppers and onions. The most popular condiments to accompany fajitas are sour cream, guacamole, pico de gallo, cheese, and tomato.

For 4-5 people you have to double everything ????
I love your blog, thank you.

    1.    Silvia said

Monica, I have not gotten to try with double the amounts and I doubt a little in the time instead of 18 minutes, I would put 25 minutes and I would try until I see that they are at their point without going overboard.
Let's see if someone is encouraged to try and leave us their comment with their result.

    Good morning
I don't have a Mercadona within my reach so I would like to know if there is an alternative to Mercadona's fajita mix
    All the best

    1.    Silvia said

Surely there are some other brand, in other supermarkets. Even so, the preparation has red and green peppers, onion and chicken pieces, plus a fajita seasoning.

Last night I made this recipe for 4 people since I had 1 package of Mercadona fajitas (I had it defrosted).
The amounts that I varied were:

    400 gr. macaroni
    600 gr. of water
    200 gr. fried tomato

The rest I left the same, including the time and they came out delicious, they ate it all.

    regards

Hello everybody. If the fresh ingredients are added, pepper, onion, chicken, and the seasoning envelope is bought separately, what quantities are they?
    Bicos from Galicia.

Belén, I have not tried to tell you quantities or time. If you dare to try tell us how it fits you.

Very good idea to escape the typical macaroni!
I have made the macaroni separately, since I need 500 gr, and in the Thmx I have put two bags of frozen fajitas and fried tomato, the 18 min, then mix and grill… they were delicious….

    1.    Silvia said

I'm glad you liked Pepa. The truth is that they are different and are very good!

  9.   MARI CARMEN said

When you say all the ingredients are added, are they also the macaroni? Or are the macaroni cooked separately?
They look very good and I want to make them today for lunch.

    Thanks and best regards.

    1.    Silvia said

With the macaroni also in the glass, everything is done at once.

  10.   Mari Carmen said

    Hello,
I have done them, but I have varied the times, because 18 minutes for the macaroni seemed excessive, I have put them when it was 9 minutes to finish, which is what I put time in the bag of macaroni and they were delicious.
    A greeting.

    1.    Silvia said

Well, I will try to go down in minutes, although with that time I look good.

Hello, I have seen the recipe and I want to make it tomorrow… I already have the Mexican preparation, the macaroni, the tomato…. but I have a question. Do you put in all the ingredients, the fried tomato? Shall we cook the macaroni with the tomato? Or do I add the tomato when I take them out and put them in the pan to gratinate the cheese?
I've never cooked macaroni with tomato, so I don't know if it's possible ...
    Thank you very much!

    1.    Virtues said

Ana, it is better to cook the macaroni, and then add the tomato, more than anything because you can run out of tomato, since pasta needs liquid to cook ...
