Milk bread

My oldest daughter had been telling me for two days that she wanted to do a "mass". She loves doing kitchen things with her hands or with a rolling pin.

The day before we had done the milk cream, cocoa, hazelnuts and sugar, so after eating we all three got to work. It seemed like a good idea to make milk breads, since they love it picnic these rolls with Nocilla® and this time they were going to have a snack but both things made by them.

As with other recipes bread with Thermomix, this milk bread is very simple and easy to do. You just have to wait for their volume to double and that time must be taken into account if we are going to make them for a snack.

We can make milk loaves from a small size or make it whole in a plum-cake mold.

Once cold I have kept them in a bag to freeze, tightly closed, and so on they have lasted perfect a few days.

With this amount comes out milk bread of 1 kilo or about 15 buns, although that depends on the size we make.

          In this case, yes, we only let it rise once. But if you have time, make two rises as you say, first with the freshly made dough and then after the formed one. I would put even less yeast 😉

    I do it with half the amounts, at least until I get it out. I also use baking powder, bought in a bakery and made about 15 gr (half of which you put from fresh). Now I have seen that the envelopes of the Cornstarch have only 5,5, which is what I should put (1 envelope, half).
    The fact is that they get very very caked and quite hard. Is it due to excess yeast? because it's the only thing I do wrong, given the amount of cornstarch. Or is it to do it with half the ingredients?

      In principle, doing it with half the ingredients should not be the problem. So it's probably a yeast problem.

      I have looked at the box of baking powder that I have at home and each sachet weighs 4,6 g. It is a special bakery and Vahiné brand.

      The only thing I can recommend is that next time you put about 5 grams but no more ... let's see if we are lucky and solve the problem!

        Hi, I put only 5 grams of my dry yeast (for half the amounts) and it turned out much better.

        Even so, I need to make it fluffier, right now, eating them alone is difficult. I will look for yeast from this Maizena (the fresh one I don't know what it is, I have seen one in the Mercadona but the Merca is far away and around I only have Chinese who have nothing).

        Their presence and flavor are great, I will not give up.

      If it is hard, I think it is because it has been left in the oven for a longer time. Regarding the raising, if you have left it the time that was put in the recipe should be enough but when in doubt next time you can leave it raising a little more.

      I have tried the recipe substituting soy milk for cow's milk and extra virgin olive oil for butter ... and they have been very good. Of course, I let the dough rise for half an hour inside the glass, before forming them and, once formed, two hours. I have had them in the oven for 10 minutes, no more. I made rolls of 100 gr each.

And the amount that you lack until you reach the 250 g of milk that is needed to make the breads, you complete it with milk.
