My oldest daughter had been telling me for two days that she wanted to do a "mass". She loves doing kitchen things with her hands or with a rolling pin.
The day before we had done the milk cream, cocoa, hazelnuts and sugar, so after eating we all three got to work. It seemed like a good idea to make milk breads, since they love it picnic these rolls with Nocilla® and this time they were going to have a snack but both things made by them.
As with other recipes bread with Thermomix, this milk bread is very simple and easy to do. You just have to wait for their volume to double and that time must be taken into account if we are going to make them for a snack.
We can make milk loaves from a small size or make it whole in a plum-cake mold.
Once cold I have kept them in a bag to freeze, tightly closed, and so on they have lasted perfect a few days.
With this amount comes out milk bread of 1 kilo or about 15 buns, although that depends on the size we make.

Hi! I love the recipe, the rolls have been beautiful ...
How about making a loaf of that bread and using it to later make your French toast recipe?
I love your blog, thank you very much!
Hello Irene, I think it is too soft bread to soak it later. I think it would break. Greetings and I'm glad you like it.
A fantastic recipe !! I have been supreme and great !! Thank you so much for the recipe???
As for my son to see the milk bread, he told me again that I haven't made it for a long time, but so young, I get it for this afternoon, I like your blog, congratulations ………. GREETINGS… .. tomlls
Thank you very much, Mari Carmen !. All the best.
How richsss !! One question: could the trick of shortening the standing time-doubling the volume be applied by putting them in the oven at 50º as is done with other doughs or would they spoil here? Thank you very much, delighted to make your recipes as always.
Hello Teresa, the truth is that I have not tried it like that, but I think I could look good. If you try, tell me how it looks. All the best.
great !! A suggestion if you allow me, in mercadona they sell a few drops of chocolate, before putting them in the oven, I put those drops together with the dough, I make them round and not too big, they look great (doowap type) for my child. they love
Hello Yolanda, I make those buns with the brioche dough and we love them. We will post the recipe on the blog shortly. All the best.
Hello, the dough only has one rise ???.
Wouldn't I have to lift first once and then give it the shape to lift the second time ???
Hello Sonia,
In this case, yes, we only let it rise once. But if you have time, make two rises as you say, first with the freshly made dough and then after the formed one. I would put even less yeast 😉
Take care!
Hello Yolanda, I want to make them round as you say, do you know more or less the weight of the dough to make the ball or do you make them by eye?
Thank you :)))
Hello! I want to make these milk muffins that look so good but I have a question: when you say "two packets of baker's yeast powder" do you mean Royal yeast packets?
Thank you
Hello Angelines, they are not those of Royal. The ones I use are from the Maicena brand and the box says "Baker's Yeast" (5 sachets come). All the best.
THAT GOODSSSSSSSSS I IMAGINE THEM WITH THE NOCILLA RICOS RICOS
Great, Juani!
Hello girls,
I have recently subscribed to the blog but since then I have enjoyed each of your recipes. I wanted to congratulate you on your work.
Today's recipe has not been put into practice for a century. You will be to blame tomorrow when it falls before the rolls….
Good weekend,
Maria Jose
Welcome María José !. I am very happy that you like our blog. Greetings and good weekend to you too.
How delicious, I made it some time ago in the form of a braid, it came in the thermomx magazine and we loved it! Next time I will make them little ones that seem to be more enjoyable !!! The delicious nocilla, eh ???
Kisses
It's very tasty, Piluka, and with much more "nocilla". All the best.
I once made milk breads (I don't remember if this recipe) and the dough was very sticky (it could hardly be used). Is yours manageable? Does it detach well from the glass and from the hands?
Thank you very much as always, girls !!
Hi Silvia, it sticks a bit but it handles very well. Greetings and thank you very much for seeing us.
hello, how are you, what are you painting with the thermo t21?
Hello Sandra, with the Th21 it is the same. All the best.
Hello girls, yesterday I prepared them for breakfast and you cannot imagine the success they had among the children. I love to see how they enjoy eating something made by me! A kiss of thanks as always
I'm very happy, Marién !.
What a richer thing for buns, although I had to make it in the form of a big bun because the dough came out very sticky but the flavor is delicious, it reminds me of some buns that my mother bought me when I was little ,,,, ahhh and congratulations you are great I love you I follow you
Thank you very much, Rocío !. I'm glad you liked it. All the best.
Hello guys, tomorrow without fail I will prepare this bread for a snack, by the way I have a doubt, does whole wheat bread stay like that of "bimbo" or the crust is like miracle bread? I wanted to ask you if you have any recipe for roquillas. Thank you very much, I love your blog.
Hello Conchi, it is a little harder than the bimbo one. You'll see how delicious it is. Soon I hope to be able to put the recipe for donuts. Greetings and thank you very much for seeing us. I am very happy that you like our blog!
I have been doing them since I had tmx two years ago every week for a snack in class and of course they come out great and they hold up a lot "fresh"
Kisses.
I made 2 trays they were delicious and fresh thanks girls
I'm glad you liked them, Mary!
Hello girls, thanks for brightening my meals! I wanted to ask you if the recipe can be made with semi-skimmed milk.
A hug
Yes, Alici, you can use semi-skimmed milk. Greetings and I'm glad you like our blog.
If I want them to last a few days, how do I keep them, in a plastic bag or plastic wrap?
Thank you!!!
Hi Silvia, I put them in a plastic bag, I use the bags to freeze. All the best.
I made the milk bread yesterday and the four of us loved it, a success. It reminded me a lot of the midnight my grandmother used to do, because they came out rather round and the cuts were not very noticeable. To try, I put sugar on two of the breads and it looks like the «monas», a typical bun in Murcia, I imagine that in other places as well.
I'm glad you liked it, Begoña !. With the sugar on top it is delicious. All the best.
It is great and very easy to make. Next time I will make it in muffins since this time I made it in a plum-cake mold. Muxas thanks for your recipe.
I'm glad you liked it, Elo! All the best.
I just made it and then baked, I hope my little one likes it and so I will do it more often! Thank you for sharing this time with us!
Thank you very much for seeing us, Scheherezade! I hope your little one likes it. All the best.
Hey.
I have a question with the recipe. If we raise the dough in the oven off, do we take it out while it is heating, or is it left inside?
Thanks 😀 I'm going to do them tomorrow !!
You have to take it out Meliade. I hope you like them. All the best.
One doubt… when I have removed the rolls after resting and to preheat the oven, they have been lowered and have lost their volume… .. is it normal ????
Hello, Almudena!
No, that shouldn't happen to you. My opinion is that they have done that second lift too long and / or with too much temperature. It is important to "move" them very carefully.
How did they fit?
A hug!
Great as everything you publish on your website. I do it with the children and let them make the balls of "buns" as they call them. Then they watch it grow in the oven and they love the magic. THANK YOU THANK YOU THANK YOU
I'm glad you like it, Yosune! Thank you very much for seeing us.
How delicious, surely my nieces will have a snack with a nocilla.
That's for sure, Cristi. They love milk breads with nocilla and while I make them they try to take a teaspoon of nocilla, what a sweet tooth!
Hello, the first thing to say that I love your forum, you are a great help. But…. Regarding the milk muffins, I have followed your recipe step by step and they have been very hard ... I don't know if that is the result or if I will have to try again!
Hello María Luisa, if they have been hard, it is because they have been in the oven too much. You already know that each oven is different and in yours I suppose they are made more quickly. Please try again to see how it works. All the best.
Hello, I decided to make the milk bread and the truth is that it is delicious. I prepared it by making small muffins for my nephews, but in the standing time they did not double the volume. I followed all the steps and let them sit for 2 hours. What have I done wrong?. Greetings to both of you, you are a great help in the kitchen.
Hello Mari Luz, although they do not double their volume, did it increase a little? If so, that is enough. It usually depends on the ambient temperature. All the best.
I return to give you another comment for this recipe, but instead of making rolls, I prepared the dough in a cake-type mold, so that something similar to sliced bread would come out.
Rich, rich, impressive. It seems to me that in addition to the almost normal bread, now I will also have to make bread for sandwiches! Thank you as always.
Thank you very much for seeing us, Marién! I also make milk bread a lot for girls and I love them. All the best.
That's it, I have the muffins in the oven off waiting for them to increase in volume! At the moment everything went well, within 1 hour or so we will bake them .. by the way, the "nocilla" is in the fridge waiting for us to release it this afternoon with the merendola. It makes my mouth water !! Thanks a lot
A question when you say that we can brush at the end with light syrup, how do I make this syrup, sugar with a bit of water? Is the invert sugar I have in the pantry worth it? Thanks again!
Hello Carmen, you will tell me how it turned out for you. They are very rich with milk but you can make a syrup with water and a little sugar. I think that the invert sugar will not work well, it is too sweet and dense. All the best.
Elenaaaa came out of death !!!! my 3-year-old girl ate 2 with "nocilla" without blinking and that is a bad eater ... they whistled. I brushed half with milk and the other with syrup. They are to finish them off in one sitting, so I froze a few so as not to be tempted. Thanks
I'm very happy, Carmen!
delicious with a little nocilla are impressivesssss.kisses
Hello Agnes, I think it is one of the best snacks, milk bread with nocilla. Kisses.
I just took them out of the oven, mine have been rather maxi hahahahaha next time we will have to calculate the size better. Congratulations on the recipes and the blog is magnificent.
Thank you very much, Fatima! I'm glad you like them. All the best.
Hello, how are you? I want to ask you if I fill it with chocolate is it going to be like a bollicao? with the thermo 21 it's all the same thanks ………………….
How would you fill it with chocolate Sandra ????? And my apologies for getting into your conversation….
Hello Sandra, do you mean to put an ounce of chocolate before baking? If so, the truth is that I have not tried it and I do not know how the chocolate will be. When you do, you can try one or two, to see how it works. With 21 it is the same. All the best.
Hello everyone, today I made the buns and the truth is that they have been stupendous, I have put the semi-skimmed milk and soy margarine, they look bought and taste excellent, tomorrow I will try the nocilla.
thanks for all your recipes
I'm glad you like them, Dolors!
As I do not like butter I have replaced it with sunflower oil and they are also excellent, today I will try to put a few pinches of chocolate to see how it looks, ... and try to make them smaller hahahahaha
Hello Fatima, with chocolate chips they are delicious. I am happy you like it!. All the best.
I write down this recipe, I have two children, who surely love them, I'll tell you how the result was.
Ha I am new, but I think it will not be the only recipe that points me.
Thanks and best regards
Welcome, Beatriz !. I hope you like our recipes, you will tell me. All the best.
hello first congratulations it's all great the question is if i put semi milk it can influence the result of the recipe
Hello M. José, with semi milk it is perfect. You'll tell me how. All the best.
Hi girls, I keep trying recipes and this one turned out very well, they are delicious, my girl liked them a lot, thank you.
I'm very happy, Ceci !. All the best.
Hello. Could this dough be frozen? We are only 2 and 15 muffins seems a lot to me.
Many thanks for the blog. It is being very helpful to me.
All the best
Hi Carmen, I think it can be frozen but I can't assure you because I have never frozen it. I have two girls and these loaves fly. All the best.
Impressive! They sucked their fingers hehe
Tomorrow I will try to make the cake 3 chocolates to take to a barbecue.
Thank you very much for the recipes, with you it is guaranteed success.
I just made the milk bread and it has been a success, my husband and my parents have tried it and they have loved it, I am looking forward to having it for a snack. Thank you so much for the recipe
Hello Elena! First of all, thank you very much for sharing your recipes. I have had the thermomix for a month, and all the recipes I have made are yours. All very good. Here you talk about putting cocoa cream on the bread and what you did with the thermomix. Could you put the recipe? The same is already there, but I don't see it.
Thank you very much and congratulations on your blog.
Hello Juani, I leave you the link of Elena's cocoa cream: http://www.thermorecetas.com/2010/11/26/receta-postres-thermomix-crema-de-leche-cacao-avellanas-y-azucar/
Thank you very much Irene !!
Hello!! I have the loaves in the oven turned off but they have not doubled in volume…. Should I leave them longer? I also read that there are people who preheat the oven to 50º and leave it for a while… ..but I didn't want to mess it up… .Thanks again for these great recipes !!
Hi, I don't get it.
I do it with half the amounts, at least until I get it out. I also use baking powder, bought in a bakery and made about 15 gr (half of which you put from fresh). Now I have seen that the envelopes of the Cornstarch have only 5,5, which is what I should put (1 envelope, half).
The fact is that they get very very caked and quite hard. Is it due to excess yeast? because it's the only thing I do wrong, given the amount of cornstarch. Or is it to do it with half the ingredients?
Thank you.
Hola!
In principle, doing it with half the ingredients should not be the problem. So it's probably a yeast problem.
I have looked at the box of baking powder that I have at home and each sachet weighs 4,6 g. It is a special bakery and Vahiné brand.
The only thing I can recommend is that next time you put about 5 grams but no more ... let's see if we are lucky and solve the problem!
You will keep us informed, right?
Kisses!
Hi, I put only 5 grams of my dry yeast (for half the amounts) and it turned out much better.
Even so, I need to make it fluffier, right now, eating them alone is difficult. I will look for yeast from this Maizena (the fresh one I don't know what it is, I have seen one in the Mercadona but the Merca is far away and around I only have Chinese who have nothing).
Their presence and flavor are great, I will not give up.
Hello, I have made the recipe but with soy milk (I have a daughter allergic to milk) and it has been hard on the outside, I do not know if I have spent in the oven. And it has not been fluffy, why can it be? I have left it in the oven for a longer time, because it seemed that it was not very well done. Could it be that it has not risen enough? I made two levados as the recipe says, but the truth is that I do not double the volume. Has anyone made the recipe with soy milk?
Thank you
Hello, Martha,
If it is hard, I think it is because it has been left in the oven for a longer time. Regarding the raising, if you have left it the time that was put in the recipe should be enough but when in doubt next time you can leave it raising a little more.
I have not come to make the recipe with soy milk but any day I try it and I'll tell you, okay?
Thanks for following us!!
Hello, Martha,
I have tried the recipe substituting soy milk for cow's milk and extra virgin olive oil for butter ... and they have been very good. Of course, I let the dough rise for half an hour inside the glass, before forming them and, once formed, two hours. I have had them in the oven for 10 minutes, no more. I made rolls of 100 gr each.
Take the test because surely your daughter likes them a lot.
A kiss!
Well, the truth is that I have a thermomix glass full of the dough to make milk bread and I see it very liquid. So I'm going to throw it in the water and look for another recipe WITH OTHER PROPORTIONS. Thanks.
Good Morning. I have made this recipe twice because at home they have loved it, the same they eat it for breakfast open and toasted as a snack. Congratulations.
I just tried the recipe and they were hard, I made them in the form of buns and I needed more than 15 min because they do not take or color… .. what did I do wrong ??? Any advice ???
Hello Caroline,
I think they were hard from baking too long. Next time set the oven to a higher temperature (from the beginning) and bake for just a few minutes.
A hug!
Hello, could you put wheat arina? It is that it is Sunday and there is nothing open to buy force
Can they be frozen? Can they be made with semi milk and without sugar?
Hello Blanca,
Yes, once done you can freeze it quietly.
It can be made with semi-skimmed milk, yes.
And about no sugar ... it won't taste like milk bread if you dispense with sugar ... it won't be bad but it will be different. My advice is to put a little less. a little less 😉
A hug!
Great !!!!! It was recommended to me by a friend and now I will not stop doing it !! ? Thank you!!
Can they be made like a cake, that is, make six balls and put them next to each other until the cake mold is filled? I've seen it done but I don't know if I could do with it
Dough for this recipe. Thanks!!
Hello Elena, today I made the milk bread and they have come out great, but is there any trick to get a nice shape? Esq they have come out, deformed, I have made them Round but when lifting they have been deformed, but with very good flavor and very soft
Hola!
We have prepared the Greek yogurt with your recipe and we loved it. Now we were looking to use the serum that we have left over, but we don't know where.
You say it can be used for milk muffins but I only see milk in the recipe.
Let's see if we can make these muffins with that painter!
Thanks for sharing such great recipes!
Hello Marta, thank you very much for your comment! You can effectively use buttermilk as a substitute for a quantity of milk. And the amount that you lack until you reach the 250 g of milk that is needed to make the breads, you complete it with milk. That is, you put the serum you have and complete it with milk until it reaches 250g. Thanks for following us! 🙂
