How rich are the mushrooms in sauce !. When I have guests at home, this is one of the incoming that I usually put on and I assure you it is a success.

The secret is in the sauce which is so rich that it goes well with everything. I have also used it to make clams and they are delicious

      Once the oil has been fried for 7 minutes, we do not place the butterfly on the blades, we add the rest of the ingredients except the mushrooms and we place the basket with the well washed clams. We program 15 minutes, varoma temperature and speed 1,5. We check that the clams are open and if they are not, we program a few more minutes. The amount of clams would be 750 gr .. But I have a problem, when I make a meal with the butterfly (up to now I have made mushrooms, ribs with potatoes and artichokes), I always get something spicy, the potatoes came out puree and the artichokes a paste!       You can use red wine but it will darken the sauce. If you want the alcohol to evaporate well, raise the temperature to varoma.

      Remember that white wine can be substituted for grape juice or you can also use the vinegar trick. I'll tell you… 5 parts water to one part white wine vinegar and a pinch of sugar. Mix it all together until the sugar is diluted and ready to use !!
      In this case it would be 85 g of water, 15 g of vinegar and a pinch of sugar.

      But remember that this is a secret… don't let the purists who will put us back and a half hear us! 😉
