Quick Vegetable Pie

I love this quick veggie pie. Its beautiful presentation is surprising with its layers full of color and vitamins 😉

I have made it with carrots, potatoes and broccoli, but it can be done with the vegetables you like the most (spinach, pumpkin, green beans, zucchini, etc.)

It is perfect as a starter, served with mayonnaise sauce or with a light béchamel it is delicious. Although it also works very well as accompaniment of a meat dish.

It's a quick cake because we don't need an oven to set and the layers are done in 10 minutes each.

    Spectacular recipe !!! I keep doing it, we love it. Just one comment, I give the potato layer 2 more minutes to cook. The broccoli and carrot al dente are great but noticing the raw potato is not pleasant. Another contribution, to the potato layer I add a touch of nutmeg instead of pepper, it looks very good.

    At first I loved the idea, very colorful and very pure in essence between each layer of vegetables, so it is advisable to take all three vegetables at the same time in each bite. The potato layer was a bit raw, which is a pity that I read the comments after preparing it, it would have helped me to read them before, personally I think that a potato puree would suit him better, I don't quite like this layer and I think it detracts from the final result of the recipe, so next time I'll substitute it. In the opinion of the diners, as the recipe is, it is essential to accompany it with mayonnaise or soft aioli.
    My final assessment, without the intention of offending anyone but helping, is that it is not as quick to prepare as I thought, since you have to be aware of the preparation for an hour and it is more attractive than tasty, perhaps each one.
