How do you usually prepare Eggplants? Do you fill? Today I propose another way: with cheeses and on mashed potatoes.
El mash You can prepare it in advance, in Thermomix in the way you like the most (I leave you here our basic recipe). Another option is to cook the potatoes in a saucepan while our Thermomix cooks the aubergine.
The rest is simple. We will only have to put the various layers of ingredients in one oven safe tray, as explained and seen in the preparation section.
Potato and Eggplant Cake
A different way of consuming aubergine: with cheese and mashed potatoes.

Ingredients
- 1 eggplant
- 1 small onion (50 g) or 1 spring onion
- 20 g oil
- 80 g of tomato paste
- 100 g of ricotta or cottage cheese
- 30 g of Parmesan cheese
- Mozzarella
- Salt (if we consider it necessary)
- Mashed potatoes
Preparation
We chop the mozzarella with our hands and put it to drain in the basket.
We put the onion in the glass and program 3 seconds, speed 7.
We add the oil and program 3 minutes, 100º, speed 1.
At that time, we wash and chop the aubergine, into cubes.
When the programmed time is up, add the tomato and the chopped aubergine into the glass. We program 15 minutes, 100º, left turn, speed 1.
We add the ricotta and the Parmesan. We program 15 seconds, left turn, spoon speed. We will salt if we consider it necessary.
In a dish suitable for the oven, spread the mashed potatoes.
On the puree we put the aubergine that we have just prepared.
Finally, we put the mozzarella, drained and in pieces.
Gratin at 190º for approximately 10 minutes, until we see that the mozzarella is golden.
Notes
We can chop the eggplant in advance, salt it and let it rest for a few minutes to release the water. Then we will have to wash it under the tap and dry it before cooking it in our Thermomix.[br]The end result is a dish with a mild flavor. If you want to give it intensity you can add blue cheese when incorporating the cottage cheese and Parmesan.
