At home we take the menestra without broth, just with a light sauce that remains between the vegetables and it manages to give them that honeyed point that contrasts with the doneness, something crunchy, with which I like to leave the vegetables. But I have tried more cooked stews and with broth and I also love them. The truth is that there are many vegetable stews, for me all delicious. I bring you my favorite, made with fresh vegetables and something more minced than usual when done with thermomix (although with speed 4 there are medium pieces). If you want even larger pieces, you will have to cut them apart. I think it's not worth it, it's so fast with the machine… And it's delicious.
It is a healthy, light and low calorie dish, ideal for diet, that you can use as a starter or as a garnish. And if you accompany her with some fruits with cottage cheese cream (Vegans, you can substitute cottage cheese for soft tofu), we have a Dinner exquisite and very healthy.

20 seconds speed 4 is not a pass ???
Certain nerea! There are 10, it is a misprint. I will correct it. Thanks! A kiss
It is great for me, today I started a diet to lose pounds before Christmas the recipe is perfect, this very night I try it.
Hi!
And if I do it with double the ingredients, for 4 people, do I have to increase the frying and cooking time ???
Thank you!!
Hi Soraya. No, always keep times and speeds. A hug!
Hola!
Can it be made with frozen vegetables?
Hello isbael! For frozen stew, you better follow this recipe: http://www.thermorecetas.com/menestra-de-verduras-congeladas/. A hug!
Ok, thank you very much Ana, I will try.
All the best
Can you add natural artichokes?
Hello Consuelo, perfectly 🙂
Hello, I have tried to make it and the vegetables are very hard with those times. I'm going to give it 20 more minutes, if I put more time, should I add more wine and oil? Thanks!
Hello Maribel:
If you have put the vegetables and amounts indicated, the vegetables should be cooked but al dente, that is, somewhat crunchy.
If you like them softer, leave them a few more minutes. I think 20 minutes is a long time, I would leave it between 3 and 5 more minutes.
If you use short times you will not need liquid but you will have less sauce.
If you are going to cook them, as you say, 20 more minutes then add liquids or they will stick.
Kisses!!
Hello, Ana. If I put natural peas in it, do I have to cook it more minutes than the 3 frozen ones or do I wait until the end to see if I need to put more time because I want it softer? Thanks
Yes, put it about 10 minutes 😉
In the step »we chop for 10 seconds at speed 4 ″ I have only managed to keep the minced vegetables ... And putting them almost whole, if I do chop them I don't even want to imagine it, so I have been left without being able to use them. Of course I do not recommend that step at all.
Hello Nuria, maybe you started the vegetables too small. But since it can be confusing because everyone can put the vegetables at the beginning of a larger or smaller size, we have modified the text so that we shred 5 seconds at speed 4 and check the size. If we want them smaller, then we repeat the operation and that's it. We are sorry that the recipe has not turned out well, do you dare to try it again following these new indications? Thanks for writing to us!!
