Fresh vegetable stew

At home we take the menestra without broth, just with a light sauce that remains between the vegetables and it manages to give them that honeyed point that contrasts with the doneness, something crunchy, with which I like to leave the vegetables. But I have tried more cooked stews and with broth and I also love them. The truth is that there are many vegetable stews, for me all delicious. I bring you my favorite, made with fresh vegetables and something more minced than usual when done with thermomix (although with speed 4 there are medium pieces). If you want even larger pieces, you will have to cut them apart. I think it's not worth it, it's so fast with the machine… And it's delicious.

It is a healthy, light and low calorie dish, ideal for diet, that you can use as a starter or as a garnish. And if you accompany her with some fruits with cottage cheese cream (Vegans, you can substitute cottage cheese for soft tofu), we have a Dinner exquisite and very healthy.

      If you have put the vegetables and amounts indicated, the vegetables should be cooked but al dente, that is, somewhat crunchy.
      If you like them softer, leave them a few more minutes. I think 20 minutes is a long time, I would leave it between 3 and 5 more minutes.
      If you use short times you will not need liquid but you will have less sauce.
      If you are going to cook them, as you say, 20 more minutes then add liquids or they will stick.

But since it can be confusing because everyone can put the vegetables at the beginning of a larger or smaller size, we have modified the text so that we shred 5 seconds at speed 4 and check the size.
