    I think that the result of this recipe is a splendid cake. In my case, I have had to extend the baking time by almost 10 minutes - each oven has its "nuances" -, and I think that sifting the flour is a detail that can further improve the sponginess of this cake, which is ideal for all, but especially for my "gluten free" environment. Thank you.

      Hello M Carmen. I would replace the rice with wholemeal. About the eggs... it would be better to put the three indicated in the recipe, because otherwise it will change the liquid-solid ratio too much and, in these pastry recipes, that complicates things.

      Hello Nelida:
      If possible. To make a sheet for piononos or Genoese cake you only have to use these ingredients:

      6 eggs
      180 g icing or powdered sugar
      1 packet of vanilla sugar
      150 g of rice flour

      Beat the whites with half the sugar until stiff.
      On the other hand, beat the yolks with the rest of the sugar until integrated.
      Then add the sifted rice flour and incorporate it into the mixture with the yolk.
      Finally, add the whipped egg whites but do it in batches and with enveloping movements.
      Put it on a baking tray covered with baking paper.
      Place in the preheated oven at 180º with heat up and down and cook until the surface is golden and the stick comes out clean.
