I have the master recipe for some delicious butter pastes and of course to make with our Thermomix. They are the typical pastas that our grandmothers could make or those that can still be found in lifelong bakeries and in many convents. Each one has its own formula but these two are exceptional. The first of all, so that we are going to fool ourselves, they have an exquisite flavor with a touch of cinnamon and the second that I have called them from San Benito have the peculiarity that as they have white wine, they have that special touch. In addition to being easy to make, we can make a considerable amount to be able to give away or take to an event as a gift because they are very handmade and everyday.
Grandma's shortening pastries
Delicious lard pastes, very easy to make and with the same endearing flavor of a lifetime. This recipe is made with a touch of cinnamon and the other with a small aroma of white wine, they are delicious.

Ingredients
Butter pastes
- 250g of lard
- 500g of wheat flour
- 250g sugar
- Egg whites 4
- Yolks 4
- a teaspoon of ground cinnamon
San Benito butter pastes
- 250g of lard
- 125ml white wine
- 600g of wheat flour
- 50g sugar
- 200g icing sugar
Preparation
For the butter pastes of the first group: we place in our Thermomix glass the butter y the sugar. We program to mix 1 minute at speed 2.
We add below the Yolks 4 and we beat again 1 minute at speed 1,5. We continue adding half of the flour and we program again to mix 2 minutes at speed 5.
We add the other half of the flour and we finished kneading and mixing 1 minute at speed 7. Surely the flour is not well assimilated in the dough so we lift the lid and help to mix well with a spoon. We reschedule 2 minutes at speed 7. At this point it has had to be well mixed, if by chance it has not been done, you can program again some more minute.
On a surface we sprinkle flour to be able to place the dough that we are going to stretch. We squeeze with our hands, we shape the dough into a ball and the we stretch with the roller. It is important to do it well leveled and that the thickness for our cookies is not too thin, but rather somewhat thick. We cut the pasta with a round pasta cutter or the open part of a glass. With the excess dough we return to make a tight ball, stretch again and make more pasta, until all the dough is exhausted.
We wash our Thermomix glass well, so that it is very clean of fats, because we are going to beat the whites until stiff. We introduce the clear and program 4 minutes at speed 3,5.
We place a teaspoon of the whites on top of the cookies, spread well with the spoon and sprinkle a little sugar on top. We put it in the oven already heated to 180 ° for 10 minutes. It is important to place the tray in the lower part so that the whites do not get too brown. When we see that the cookies have taken on a toasted tone we will know that they are ready.
For the San Benito butter pastes: we place in our glass butter and sugar and we program 1 minute at speed 2.
We take half of flour and white wine and we program 2 minutes at speed 5.
We dump again the other half of the flour and we program others 2 minutes at speed 7.
We dump our ready dough on a floured surface. We stretch with the roller and we leave a rather high thickness because these pastes have height. We make the shapes of the pasta with a pasta cutter or something circular, which can also be the open mouth of a narrow glass. With the excess dough, we return to make a tight ball, stretch again and make more pasta, until all the dough is used up.
We put it in the oven already heated to 180 ° for 10 to 12 minutes. We will see that they are already done when they take a golden tone.
We take a bowl and pour our sugar glass. With the pasta already cold, we can bathe them in this sugar and leave them completely white, they will be spectacular.
