Homemade tofu (bean curd)

Do you remember the indian paneer that we published recently? Well today I bring you the vegetable version: the Tofu o tofu. Tofu is the great meat substitute for Vegetarians: it is rich in proteins, calcium and minerals. Low in calories (54 Kcal per 100g), does not have cholesterol and what's more, it helps reduce its levels. It is smooth, digestive and an alternative to cheese for lactose intolerant. And if the milk used is gluten-free, it is also suitable for Celiac.

The base of this cheese is soy milk, so if you want an authentic tofu, use a good soy milk, which only has water, soy (you can put soy, seeds or soy beans), salt and, if anything, some sweetener or vitamins, but no additives more. You can take it alone, with soy sauce, in salads or use it in some of our recipes, here you have a selection.

    I love this type of post and with the thermomix ,,,,,, I only have one doubt …… what kind of cloth do you use, or gauze, and then wash it with water alone xq if it is with detergent it tastes like detergent… .. it is a technical question… .. :-P

      Hello Mayela, I use a large gauze, like a cloth, but gauze, like those used for sanitary cures. In fact, I bought it at a pharmacy. As soon as I finish with it, I wash it very well, but only with hot water. Although I also see no problem in washing it with neutral soap if you see that it does not stay well, as long as you rinse it very well. A hug!

      Hello Juana María. Many soy milks (or drinks) have additives that try to improve their flavor so that it looks more like cow's milk (I don't know why it has to look like cow, really. If it's soy, then soy , but anyway, things from the market), but precisely those are what make working with it for tofu, not going well. Look for the ingredients to contain only soy (you can put soy, seeds or beans), water and salt. It can also contain a sweetener or vitamin, but no stabilizer or additive. I have also put it in the recipe so that there are no doubts. I buy it in an organic supermarket, the brand is Soria Natural, but surely there are common commercial brands that also have it.     I just did it .. and I did something wrong fixed. I made it with soy milk from vive soy. and when I've strained it, everything slips through me. milk stayed .. I don't know what I did wrong

    I found the Yosoy brand of soy drink, which contains ingredients: water, dehulled soybeans (13,5%) and sea salt.
