Cookies with cereals

We are going to prepare some lactose free cookies and without eggs that stand out for their simplicity and for how rich they are. They are made with vegetable rice milk and are decorated with cereals such as Corn flakes.

Take advantage of that day that you are going to turn on the oven to make them. They have to be in the fridge for a while so you can prepare them in advance and, when the oven is hot and empty, you bake them.

Ingredients

  • 250 g flour
  • 50 g whole sugar
  • 5 g Royal type baking yeast
  • 100 g vegetable rice drink
  • 1 pinch of salt
  • 70 g of very cold butter in pieces, without lactose if there is intolerance
  • 3 tablespoons of cereals (if there are intolerances, check that they are lactose-free)

Preparation

  1. Put the flour, sugar, yeast, rice drink, salt and lactose-free butter in the glass. We program 30 seconds, speed 5.

  2. Spread a sheet of parchment paper on the counter and place the dough on it. Put another fold of parchment paper on top of the dough. Roll out the dough until it is about 3 millimeters thick.

  3. Reserve the dough (already spread and between the baking papers) in the refrigerator.

  4. After about 10 minutes we take it out. Remove the parchment paper from the top and sprinkle about three tablespoons of cereal on the spread dough. We return to put on paper and, with the rolling pin, press lightly so that the cereals adhere to the dough.

  5. Store again in the refrigerator for at least an hour.

    After this time, we remove the top paper and cut the cookies. I have made squares with some knife cuts but you can give your cookies the shape you want with any cookie cutter.

  6. We are placing the cookies on two oven trays covered with baking paper (we use the ones we have already used to spread the dough).

  7. Bake at 180º for approximately 15 minutes, until we see that the cookies are golden both on top and on the base.
