Mini chocolate chip muffins

These mini-muffins they are ideal to take to meetings with friends. Little ones, so we can try other things, and they are very good. In addition, this way we avoid carrying a knife and having to make portions.

The time for farewells arrives: last days of school, end of the activities we have done since last September ... And many times we celebrate it by eating. If you have a nearby event's audience of these characteristics, I recommend them. And if the protagonists are children ... do not hesitate.

But I am not deceiving you, making them will take longer than if they were muffin normal. If you don't have it, go easy: make the muffins the usual size and bake them a few minutes longer than these.

Fun mini muffins with chocolate chips. Perfect to take them to meetings with friends, especially if there are children.

Ingredients

  • 190 g of sugar
  • The skin of 1 lemon (only the yellow part)
  • 4 eggs (on one side the whites and on the other the yolks)
  • 1 pinch of salt
  • 240 g olive oil
  • 120g milk
  • 350 g of pastry flour
  • 1 envelope of Royal type yeast
  • 60 g of icing chocolate in pieces or chocolate chips

Plus…

  • Paper for truffles or for minimagdalenes
  • Rigid mold for minimagdalenes

Preparation

  1. We weigh the milk and oil and reserve. To weigh these liquids it is best to do it in containers that we will place on the lid.

  2. We put the sugar and the lemon peel in the glass. We program 30 seconds, progressive speed 5-10. We take out and reserve.

  3. Without washing the glass we put the mariposa on the blades. We add the 4 egg whites with the salt and we program 4 minutes, speed 3 1/2. Once assembled, we take them out to a large bowl and reserve them.

  4. Even with the butterfly on, add the egg yolks and the sugar with lemon peel that we had crushed at the beginning. We program 1 minute, speed 3 1/2.

  5. Next we program speed 3, without programming time, and we incorporate both the milk and the oil through the bottle.

  6. Now we open the lid of the machine. We remove the butterfly and add the flour and yeast. We mix 30 seconds, speed 4. We integrate this mixture with the whites mounted in the bowl and also the chocolate chips.

  7. Let the dough rest in the refrigerator for half an hour.

  8. We place the paper molds in a rigid mold. Then we are filling these papers with the dough, with a couple of spoons, and without filling them completely. Sprinkle each mini cupcake with a little moistened sugar.

  9. Bake at 220º for about 9 minutes, and make the necessary batches. If the mold is 24 minimagdalenas you will need to make 2 batches.

Notes

They come out about 90 units. They can also be made in the usual size, giving a few more minutes to bake.
