Panna Cotta cake with mandarins

Preparation

1. Base of the cake: in our Thermomix glass we toss the 160 g of cookies a little broken with our hands. We are going to shred them by programming 10 seconds at speed 6.

2. We add the melted butter, which we can previously melt in the microwave at low temperature. We mix it to 20 seconds at speed 3,5.

3. We prepare a round 18 cm mold that can be removed from the mold. Otherwise we will put baking paper to be able to remove the cake more easily. We pour our biscuit base, press well and expand it throughout its base making a crust. We put it in the oven to 180 ° for 12 minutes.

4. While we make the cream of the cake. In our clean glass we add the 500 ml of cream to beat. If it is cold we program 10 minutes at 110 ° at speed 0,5. If the cream is at room temperature we program it to 8 minutes at 110 ° at speed 0,5. We take our glass of cold water and hydrate the 6 sheets of neutral gelatin.

5. When the cream is hot, we will add the jellies well drained and we will program again 1, 30 minutes at 100 ° at speed 1,5. We take out the cream and put it in the refrigerator for about 1 hour to cool and thicken.

6. After the hour we pour our cream on the base of the cake and put everything back to set in the refrigerator for about two hours.

7. When we have curd the cake we are going to make the cover. We first put the two gelatin sheets to hydrate in the glass of water. We remove the mandarin segments from the can and put them to drain. We will save the syrup to put it in our Thermomix glass and we will heat it during 1, 30 minutes at 110 ° at speed 1,5.

8. When the syrup is hot, add the two well-drained gelatin sheets and re-program during 40 seconds at 95 ° at speed 1.

9. We pour the syrup on the cake and decorate with the mandarin segments. Finally we put it in the refrigerator, we wait 1 hour for the coverage to set and we can already taste our cake.
