I propose an original idea for Christmas. It's a little bite creamy, parmesan semi-cold and bittersweet, with some alcohol, with which to finish dinner and give way, either to a more robust dessert or to the nougat and typical Christmas sweets (do you know that in thermorecetas We have several recipes to make homemade nougat and nougat-based sweets? It is a parmesan cream on a bittersweet base of balsamic vinegar sweetened with grappa or marc brandy. Do you dare? It's good. Parmesan lovers should not miss it.

It is served in glasses of shot or in glasses, in small quantities. And it is taken with teaspoon.

Ingredients

  • 120 g parmesan
  • 100 g of liquid cream to mount (it must be cold, from the refrigerator)
  • 1 tablespoon Philadelphia type cheese spread
  • 100 ml (1 cup) of Modena vinegar
  • 50 ml of staple or pomace brandy
  • 50 g white sugar

Preparation

  1. Grate the parmesan to turbo boost until leaving it practically in powder.

  2. Put the butterfly on the blades. It is important that the glass is cold, that we have not cooked in it before. Shake the cream container and place 100 g in the glass together with the Parmesan and the spread cheese. We are going to whip the cream with the Parmesan, we want a creamy, not solid texture. So we program speed 3 and a half, no time. And we will stop when we have a cream (approximately 3 minutes later).

  3. We extract the cream from the glass. and we reserve. We clean the glass.

  4. We introduce the balsamic vinegar, the pomace and the sugar. We're going to make a balsamic vinegar reduction. For this we program 25 min, 100º, at speed 2, always without the beaker so you can cut down.

  5. Let it cool down and mount the shot putting the vinegar reduction in the bottom and the Parmesan cream on top.

    Wow !!!! What a good idea and as the experiments have to be done with soda and not with Chap..frances, I will do it this weekend before putting it on Christmas.
