This work with a sourdough is most gratifying. It allows us to adapt any recipe that uses baker's yeast and gives it an unmistakable flavor and aroma. In this case I have used it to prepare some Parmesan rolls (Parmesan) that can be served as an aperitif or to accompany our dishes.
If you use sourdough You will know that the timing is indicative since it depends on many factors (temperature, flour used ...). You will have to play with that temperature-time balance a bit to make them look perfect.
Ah! What you see on the plate is quince. Try them with this sweet because they make a great pair.
Parmesan
Parmesanitos are ideal for cheese lovers. They are made with sourdough and combine perfectly with jam, quince, sausages ...

How can I do if I don't have sourdough?
If I make sourdough, can I save it or freeze it to use at other times?
Hello Mercedes,
You can use baker's yeast although the substitution is not so easy because the sourdough has an amount of flour and water that you would have to add to the total amount of flour and water in the recipe.
The sourdough must be kept. You can have it at room temperature, if you use it daily, or in the fridge, where it can last for weeks. Even in the freezer. It seems difficult to work with it but it is not so difficult. It is also very rewarding.
A hug!
