I don't know if it happened to you ... but there are times I use cherries to decorate a cake or cake and I don't know what to do with the ones that are left over.

This plum cake It is a good way to give them an outlet: with the excuse we mark ourselves a very rich sweet for a snack or to have for breakfast.

In this case they are cherries in syrup, very good ... I don't know if you know them but the syrup can be used both to make sweets and to cocktails.

A very simple plum cake to take advantage of those cherries that we have left over from another preparation. Great for breakfast and a snack.

Ingredients

  • 4 eggs
  • A pinch of salt
  • 150 g of sugar
  • 125 g of butter and a little more for the mold
  • 200 g flour
  • 8 g Royal type baking yeast
  • Some sour cherries
  • Rolled almonds

Preparation

  1. We preheat the oven to 180º.

  2. We separate the whites from the yolks. We fit the butterfly on the blades and put the whites in the glass. We mount them with a pinch of salt during 3 minute at speed 3. We take them out and reserve them.

  3. We melt the butter in the microwave, on low power.

  4. Still with the butterfly on, put the yolks and sugar in the glass. We program 2 minutes, speed 3. We remove the butterfly and add the butter, flour and yeast. We program 6 seconds, speed 5.

  5. Add the whites and cherries and mix everything delicately with the spatula.

  6. We put the mixture in a plum cake mold of about 24 cms. We cover the surface with the rolled almonds.

  7. Bake at 180º for approximately 1 hour.
