Polvorón cookies

Today's sweets have the texture of polvorones but are butter cookies.

I have done them with dried apricots, sugarfree. If you do not mind that they have white sugar, you can substitute the one hundred grams of dried apricots for one hundred grams of sugar.

Dried apricots, raisins, dates ... are dry fruits that are not usually lacking in Christmas tables. If you have leftovers, do not hesitate to use them in your pastry recipes.

Ingredients

  • 150 g of mixed nuts (almonds, cashews, hazelnuts ...) and some more to decorate
  • 100 g dried apricots
  • 200 g of wheat flour (half normal and half wholemeal or all normal)
  • 200 g butter in pieces
  • A pinch of salt
  • 1 egg

Preparation

  1. We put the 150 g of nuts and the dried apricots in the glass. We program 10 seconds, speed 10.

  2. We lower with the spatula what has remained on the walls of the glass.

  3. We add the flour, the butter, the salt and the egg. We program 20 seconds, speed 4.

  4. We take out the dough and compact it. We wrap it in film and reserve it in the refrigerator for approximately 1 hour.

  5. After that time we preheat the oven to 180º. We cover the baking trays with greaseproof paper.

  6. We take the dough and with our hands we are forming small balls and we are placing them on the baking paper.

  7. If we want, we place a dried fruit in the center of some of them.

  8. Bake at 180º for 15-18 minutes or until we see that they are golden.

  9. We remove the trays from the oven and do not touch the cookies until they are completely cold.

Notes

It is important that the cookies are cold before removing them from the tray, otherwise they will unravel. If you like things very sweet or I recommend replacing the dried apricots with sugar. Nuts on the surface are easily removed.
