Pumpkin pie and condensed milk

Preparation

1. We started the recipe by roasting the pumpkin. We wash and dry it well and put it in the oven, preheated to 200º. It will be ready after approximately 45 minutes (it will depend on the size of the pumpkin). By pricking it with a knife we ​​will check if it is ready or not. It will be when we can tap it without difficulty. If we notice that it is hard, we will have it a few more minutes in the oven.

2. To prepare the base, we put the orange peel and the sugar in the glass. We program 10 seconds, speed 8.

3. Add the flour, eggs, butter and yeast. We program 20 seconds, speed 5.

4. We put the dough between two sheets of greaseproof paper and stretch it with a rolling pin until we obtain a circle of about 30 cm in diameter.

5. We reserved our base in the fridge for a few minutes.

6. After that time we take it out and place it on a removable mold of approximately 26 cm in diameter, covering the base and the sides. We do not need to remove the baking paper, neither the base nor the surface.

7. On the baking paper on the surface we place dried vegetables to cook in white. Bake at 180º (preheated oven) for 25 minutes.

8. To prepare the filling, we cut our roasted pumpkin and put 670 g (without skin) in the glass. We program 3 seconds, speed 5. We lower with the spatula what is left on the walls.

9. Add the condensed milk, flour, eggs, yeast, butter, cinnamon and honey. Always with the beaker on, we program 10 seconds, speed 4. We lower with the spatula what has remained on the walls of the glass and we mix again 10 seconds, speed 4.

10. When the base is baked we remove the mold from the oven. We remove the dried legumes (we will save them for next time) and we also remove that baking paper from the surface. We put our cream on that base. If we want, we cut the pieces of pasta frola that protrude and put them on the filling. We bake our cake, already complete, at 180º for 35-40 minutes.

11. It can be served hot, warm or cold. It is important that we keep it in the refrigerator to prevent it from spoiling.

12. To make the presentation more careful, we can cut each portion with a plating ring. So it will be as seen in the photo.

13. We put some chopped and toasted almonds in each portion, to crown it.

14. The almonds can be toasted in the oven (a few minutes at 180º will be enough) or in a frying pan.
