The other day i bought purple carrots. They taste practically the same as oranges and are the same shape. But their appearance is different, especially once peeled: they have a velvety, dark purple color… What a great discovery!
The color they give to the dishes is incredible. And you can see it coming, because only by peeling them they already stain the hands. In this case I have used them to make a mashed potatoes and in the photo you can see the result.
With that color these carrots have to be beneficial for our body, don't you think? Well yes, because they contain anthocyanin, a great antioxidant. They are low in calories and rich in vitamins A, B and E, and minerals.
If you see them in the market, do not hesitate to try them.

Come up good afternoon, I'm going to make this rich garnish puree by adding the oil 6 also substituting the potato for parsnips, which are now at their best, and would I add something else for flavoring? Or just nutmeg?
Sorry, M Carmen, I just saw this message without answering... Did you get to make the puree? I think you can flavor this puree with whatever you want. Nutmeg is always a good option 😉
