Cookies with raisins and soluble coffee

The most beautiful cookies in the world are not, but they are the simplest. They taste like coffee, because they carry instant coffee, and in them we find pieces of raisins.

We are going to make the dough in Thermomix and we will also use our glass to chop the raisins. Then with the dough we will form a cylinder (in the video you will see that it is very easy) and, after an hour in the fridge, we will cut the cookies. 

We will therefore not use molds, seals o Pistolas. In this case, we are going to go easy.

Ingredients

  • 100 g flour
  • 1/2 teaspoon baking yeast
  • 15 g cornstarch
  • 65 g butter at room temperature
  • 50 g of sugar
  • 10g milk
  • A pinch of salt
  • 100 g raisins
  • 2 teaspoons of soluble coffee (Nescafé type) with or without caffeine

Preparation

  1. We put the flour, yeast, cornstarch, butter, sugar and salt in the glass. We program 15 seconds, speed 4.

  2. We put the mixture in a bowl and compact it with our hands. We booked.

  3. We put the raisins in the glass and program 7 seconds, speed 6.

  4. We dissolve the soluble coffee in the 10 g of milk.

  5. We put the dough that we have prepared at the beginning back in the glass. We add the mixture of coffee and milk. We program 30 seconds, left turn, speed 2.

  6. We put the dough on the worktop, compact it and form a cylinder, as seen in the video.

  7. We wrap it in film and reserve in the refrigerator for at least 1 hour.

  8. After that time we remove the film and cut the cylinder into slices. They will be our cookies.

  9. We are putting these portions on a baking tray covered with baking paper.

  10. Bake at 180º (preheated oven) for approximately 15 minutes.

  11. Let cool before removing them from the tray.
