Ratatouille with baby eels and crispy ham

Preparation

1. In our Thermomix glass we add the 80 g of olive oil.

2. We clean the peppers and cut them into large pieces. Peel the onion and divide it into four parts. Peel the two garlics. We clean the tomatoes and cut them into small pieces.

3. Wash the zucchini and add it to the glass in large pieces. We add all the vegetables that we have previously chopped except the tomato. we program 9 seconds at speed 4.

4. Once the vegetables are chopped, we will put it to cook. we program 15 minutes at 120 ° at spoon speed.

5. We lift the lid and add the chopped tomato, salt and black pepper to taste. We cover again and cook 20 minutes at 120 ° at spoon speed.

6. In a frying pan, heat the 3 tablespoons of olive oil. Add two minced garlic cloves and let them brown. Next we add the baby eels and let it cook, turning it just three times in the pan.

7. For the serrano ham crunch: between two sheets of baking paper we put the slices of serrano ham into somewhat thick strips. We put it on a plate and put it in the microwave at maximum power for 30 seconds. When removing it, place a plate on top and let it cool.

8. Once the ratatouille is finished, we plate it up. We place a base of ratatouille and above the baby eels. We put the crispy serrano ham in between.
