PoleĆ” (EspoleĆ” or Sweet Porridge)

Today I bring you a typical Andalusian dessert, specifically in the area of ā€‹ā€‹Huelva, Seville and CĆ”diz.

It is a dessert very popular Of our ancestors. In my house my mother sometimes did it to us, but somewhat thicker. The truth is that I barely remembered them, but the other day we went out to eat with some friends and for dessert someone ordered the pulleys.

Curiosity arose and I immediately began to investigate and how adapt it to the thermomix. Searching, searching, I found Carol's cooking blog that solved all my doubts.

We have loved it and I am looking forward to surprise my friends to see what face they make when they see my homemade poleĆ”.

Here in JaƩn, which is where I am from, they are called gachas and they are made with toasted flour, you cook the milk only with cinnamon, remove the cinnamon and add the flour previously mixed with the sugar, until it thickens and then add the bread fried and cinnamon on top, some people, they put honey instead of cinnamon, and they are to lick your fingers

I'm dying to make this porridge. But I have a question: won't they be better if together with the oil made the flour so that it can be roasted and then I bowl the milk? If I do it all at once, doesn't it taste like raw flour? Thanks.

    1.    Mayra Fernandez Joglar said

      Hello MercĆØ:

The toasting of the flour is used more when we make bƩchamel but this recipe is a type of pastry cream or fried milk and it does not need it.

      Enjoy it !!

  13.   KDMK said
