Pesto is not only used for pasta, with rice it also goes perfectly. We show it to you in the video recipe Today.

At first we will prepare the pesto, first chopping the cheese and then the rest of the ingredients. We will not need to wash the glass to cook the rice afterwards, in the basket.

A Pair of tomatoes in oil they will give even more flavor to the dish. Don't you have those tomatoes? Well, substitute them with other ingredients: pieces of anchovy in oil, olives or even some cherry tomatoes cut into halves.

The traditional pesto is made with pine nuts but we are going to put Cashews because we like their taste and because they are cheaper.

Ingredients

  • 50 g of Parmesan in pieces
  • 15 g cashew nuts
  • 1 / 2 garlic clove
  • 40 g of basil
  • 80 g of extra virgin olive oil
  • A little bit of salt
  • About 10 tomatoes in oil, drained and cut into strips
  • 750 g of water
  • 240g basmati rice

Preparation

  1. We put the Parmesan in the glass and program 15 seconds, speed 10.

  2. Add the cashews, garlic, basil, oil and salt. We program 10 seconds, speed 7.

  3. We lower with the spatula what has remained on the walls of the glass. We program again 10 seconds, speed 7.

  4. We put the pesto in a bowl and add the dried tomatoes, in strips. We cover it with film.

  5. Without having to wash the glass, we put the water and salt in it.

  6. We put the basket in its position and put the rice in it. We program 15 minutes, varoma temperature, speed 5.

  7. We remove the basket with the help of the spatula and put the rice in a large bowl.

  8. We mix the rice with the pesto and the dried tomatoes. Another option is to bring both preparations to the table separately.
