Ricotta and almond cake
A simple and quick cake to make with your Thermomix. This recipe has almond and ricotta as its main ingredients, to give it a soft and special flavor.

Ingredients
- 60 g butter, softened or at room temperature
- 150 g of sugar
- 50 g of wheat flour
- 1 tablespoon baking powder
- 150 g of ground almonds
- 2 eggs
- Zest of a lemon
- 150 g ricotta or cottage cheese
- A handful of sliced almonds
Preparation
We put the 60 g of soft butter, the 150 g of sugar and the lemon zest in our glass. We program it 1 minutes at speed 2.
Add the 2 eggs and program 30 seconds at speed 2.
Add the 150 g of ricotta, the 50 g of wheat flour and the tablespoon of baking powder. We program it 30 seconds at speed 2.
Finally we add the 150 g of ground almonds and program them 1 minute at speed 2.
We prepare a mold of 18 cm in diameter, if it is made of silicone much better to be able to unmold it easily. If not, you can grease it with butter so that the cake does not stick when you remove it from the mold. Add the dough, smooth its surface and add the sliced almonds on top. We bake it for 40 minutes, with heat up and down. If you notice that its surface is toasted a lot during baking, you can cover it with aluminum foil until it is finished cooking.
Once baked we unmold it and let it cool. We serve it cold and accompanied with a nutritious glass of milk.
