I know that the typical thing today is the roscon de reyes, but this ricotta and chocolate cake it's so good that I can't let another day go by without publishing it. Especially if we take into account that tomorrow begins the season of diets and good resolutions.

It is perfect for any celebration or to have a detail if they invite us to eat and we want to surprise with the sweet.

It seems bought. It reminds a bit of a cake they have at Ikea and that is also delicious. Yes, ours is home and very easy to do with Thermomix.

Ingredients

For the base of the cake:

  • 250 g of pastry flour
  • 150 g of sugar
  • 1 whole egg
  • 1 egg yolk
  • 120 g butter at room temperature
  • 1 envelope of Royal type yeast

For the interior:

  • 100 g almonds
  • 120 g of sugar
  • 1 whole egg
  • 1 egg yolk
  • 300 g of ricotta

For coverage

  • 150 g of fondente chocolate in chunks (or 100 g of white chocolate and 50 of dark chocolate)
  • 20g milk

Preparation

  1. We start by making the base of the cake. We put in the glass all the ingredients of the base: flour, sugar, egg, yolk, butter and yeast. We mix 10 seconds, speed 5.

  2. We spread the dough with a rolling pin and place it on a 28 cm diameter removable mold that we will have previously greased. The dough has to cover the edges as well.

  3. We prepare the interior. We put the almonds in the glass and pulverize them by programming 10 seconds, speed 7. We put the crushed almond on the base of the cake.

  4. We put the sugar and the eggs (1 whole and 1 yolk) in the glass. We mix by programming 1 minute, speed 4. We incorporate the ricotta and program 2 minutes, speed 3 1/2. We spread this mixture over the crushed almonds.

  5. Bake at 180º for approximately 40 minutes.

  6. We prepare the coverage. We put the chocolate in the glass and program 5 seconds, speed 7. We add the milk and melt the chocolate by programming 3 minutes, 70º, speed 3. When the cake is cold we spread this cream on the surface.

  7. Let cool before serving.

Notes

It is better to do it the day before when we want to consume it. It is kept in the refrigerator.

      Hello Sonia,
      I think they already sell it in many large surfaces such as Carrefour or Hipercor. If you can't find it, you can substitute it for cottage cheese.

      And the cottage cheese, can you find it? The mascarpone will give the cream another consistency and will add more calories to the cake. If you can, substitute it for cottage cheese.
