Lombard risotto for celebrations

For the meetings with family and friends this Christmas I propose a red cabbage risotto. It has a spectacular color and a very pleasant taste. It is an inexpensive and attractive dish that you can "practice" any day of the day to keep track of the times. Keep in mind that, although the one in the photo is made following the recipe that I write below, the cooking of the grain may vary depending on the variety of rice you use.

To make it even more "festive" you can use fish broth and present it with some Prawns fresh grilled at the last minute. And, if not, with some plasters of Lombard, like the ones you see in the photo, it is also phenomenal. 

Don't forget to sprinkle cheese and skin of orange, both grated, once you have the risotto on the plates. Both will add flavor and, the orange, also colorful.

    how much is 1/2 red cabbage? The sizes are very varied! I would also like to know like Vanessa when she pours the wine.

      Hello Belen:
      In this case, it is not essential to put an exact weight of cabbage but, to give you an idea, use about 400 g.
      About wine, I just included that step in the recipe. Sorry for the mistake 😉
