    Hello M. Carmen .... the butter is added so that it has a more special flavor and that the dough has a much smoother and more elastic consistency. In my opinion I think that the eggs would be the only thing that I would not remove but the butter if you want to remove it I think there would be no problem. If it is a matter of reducing fat, you should not add any type of oil, and if on the other hand you want it to contain some fat but with less quantity, try adding half the butter. They are some of the options that I propose and I think that to reduce fat, I would like to point out that you should not remove the eggs because they are important for a good dough and remove the butter (or put half of it).
