About the molds, I can't tell you. They will sell them but I don't think it's easy to find them (at least I've never seen them). Perhaps the closest thing is to use square muffin molds although they do not have the same shape ... But that's why don't stop making them, with or without a mold they are just as rich!

About the baking tray ... maybe the recipe you used was another, right? When I have made it at home using the baking tray, of course the appearance is of a thin sponge but the flavor has nothing to do with it. Also when it comes out of the oven I cut it into small rectangles and I keep them that way.

Think that they are homemade, without preservatives or other additives. What you can do is, once baked, freeze them. When you want to consume them, you take them out a little before or put them in the microwave for a few seconds. So they will be almost almost as freshly made.

The problem with making that change is that then they would not taste like sobaos ... Here is a recipe for muffins that look great with oil. If you want to substitute the sunflower for olive oil you can do it calmly, they will have a more intense flavor. You can also make them without chocolate.
