We are going to prepare some simple and delicate cookies. They are butter and they carry nuts, Cashews specifically.

We will not use a roller or molds, only our hands. The only thing we have to bear in mind is that the dough is quite soft and that we can only form the cookies by having the wet hands.

Once we know this everything is very easy. We will make balls and place them on the baking tray, leaving a distance between them because, when baked, they expand.

Delicate shortbread with cashew nuts and whole wheat flour.

Ingredients

  • 170 g cashew nuts (20 g + 50 g)
  • 90 g of sugar
  • 150 g whole wheat flour
  • A pinch of salt
  • A pinch of baking soda
  • 150 g butter in pieces
  • 1 egg white

Preparation

  1. We put 20 g of cashew nuts in the glass and chop them lightly, programming 3 seconds, speed 6. We take out and reserve.

  2. We put the other 150 g of cashews and the sugar in the glass. We program 20 seconds, speed 10. We lower with the spatula what has remained on the walls of the glass.

  3. We add the flour, salt and baking soda. We program 5 seconds, speed 10. We go down with the spatula.

  4. Add the butter, in pieces, and the egg white. We program 10 seconds, speed 10.

  5. We preheat the oven to 180º. We put greaseproof paper on a tray.

  6. With wet hands we form small balls. We put them on the tray, on the baking paper.

  7. On some of them we sprinkle the cashews that we have chopped in the first step.

  8. Bake at 180º for 10 minutes.

  9. When they are lightly browned, remove the tray from the oven and let the cookies cool (if we remove them from the tray when they are hot they will break).
