I bring you a second plate for the meals of Christmas: A sirloin pork stuffed with bacon, peppers and cheese bathed in a sauce of piquillo peppers. It is a strong and very tasty dish, which can be garnished with potatoes or vegetables.

Pork tenderloin stuffed with bacon, peppers and cheese bathed in a piquillo pepper sauce, a filling and very tasty dish that can be garnished with potatoes or vegetables.

Ingredients

2 pork tenderloins
4 slices of bacon
10 piquillo peppers
4 slices of soft cheese (I have used tronchón)
50 g onion
200 g of cream
2 Bay leaves
1 liter of water
salt and pepper

Preparation

Cut the fillets lengthwise, without cutting them completely, to be able to open them, like a booklet. Season and fill with two slices of bacon, two peppers and two slices of cheese each. Close each sirloin again and tie it with twine.
Place the fillets in the Varoma container and cover it.
We put the water and the bay leaves in the glass. We program 33 minutes, Varoma temperature, speed 2. We place the Varoma in its position.
At the end, we remove the Varoma, and reserve.
We throw the water and the bay leaf and, without rinsing the glass, we introduce the remaining peppers and the onion. We crush during 5 seconds at speed 8.
We lower the remains of the walls and add the cream and half a teaspoon of salt. We cook for 8 minutes, 100º, speed 2.
Cut the twine from the sirloins, cut them into slices and serve them with the sauce.
