To prepare this recipe we are going to use half a kilo of spinach. The protagonists will be the filling of our Patty which will also have grated cheese, sausages and two eggs. In the video you will see how to prepare it.

La sausage it's optional. In fact, you can't even see it, because it is crushed together with the spinach and the rest of the ingredients. If you want to notice it, find pieces of sausage, do not put it in the step that I indicate in the recipe and save it for last. Once you place the filling on the dough, put the sausage pieces and that's it.

Ingredients

  • 500 g of water
  • 1 teaspoon of salt
  • 500 g of spinach (the leaves, clean and dry)
  • 90 g of Parmesan in pieces
  • 150 g leek, cut into pieces
  • 30 g of extra virgin olive oil
  • 160g pork sausage, already cooked
  • 2 eggs
  • A little pepper
  • Two rolls of chilled shortbread or puff pastry

Preparation

  1. We pour the water and salt into the glass.

  2. We put the spinach in the varoma container. We close it and place it in position. We program 25 minutes, varoma temperature, speed 1.

  3. We carefully remove the varoma and reserve the spinach inside.

  4. We wash and dry the glass. We put the Parmesan in it and program 15 seconds, speed 10. We take it out and reserve it in a bowl.

  5. Now we put the leeks in the glass. We program 5 seconds, speed 6. We add the oil. We program 5 minutes, 120º, left turn, speed 1.

  6. We add the spinach that we have steamed. We program 10 minutes, 100º, left turn, speed 1. Let cool for a few minutes.

  7. Add the eggs, the grated cheese, the sausages in pieces, a little salt and the pepper. We program 30 seconds, left turn, speed 4.

  8. We prepare the mold of about 26 centimeters in diameter. We put one of the pasta sheets on the base, if we want with the same baking paper with which it is usually rolled.

  9. We distribute the filling over the dough.

  10. We cover the filling with the other sheet of dough and brush the latter with a little milk.

  11. We preheat the oven to 180º. Once hot, we bake the empanada at 180º for 45 or 50 minutes, until we see that the surface is golden.
