Add spinach chicken nuggets, isn't that a great idea? The nuggets are juicier and it is an original way to include this vegetable loaded with properties in our diet.

When we did the turkey nuggets we suggested bake them instead of frying them. With these you can also use one or another way of cooking, in both cases they are phenomenal.

Chicken, spinach and cheese are some of the ingredients in these spinach or spinacini nuggets. They are easy to make and they are delicious!

Ingredients

  • 500 g of chicken breast
  • 50 g of frozen spinach (must be defrosted before starting the recipe)
  • 1 egg
  • 1 tablespoon of cornmeal
  • 1 tablespoon of breadcrumbs
  • 1 tablespoon of Parmesan cheese -or other- grated (optional)
  • Sal Island
  • Pepper or nutmeg

To bread:

  • 1 or 2 eggs, beaten
  • Bread crumbs

To fry or to bake:

  • Extra virgin olive oil

Preparation

  1. We cut the chicken breast into pieces. We put them in the glass and grind by programming 20 seconds, speed 4.

  2. Add the spinach (we have to defrost them first and drain them very well). We program 10 seconds, speed 4.

  3. Add the egg, flour, grated cheese, salt and grated nutmeg (or ground pepper). We program 10 seconds, speed 3.

  4. Now we shape our spinacini. We pass them through beaten egg and then in breadcrumbs.

  5. To cook them we have two options. One of them is to fry them in plenty of hot oil. The other, bake them at 180º, brushing them first with olive oil.

  6. The ones you see in the photo are baked and they turned out really good.

Notes

You can double the amount of spinach if you want your spinacini to have more vegetables. With the amounts that I put here, some quite "clear" nuggetes come out.

    I just made them, what a dinner I have today! They have been very good, I have sautéed a small-medium onion and a clove of garlic, then I have put the breasts and I have chopped everything together. Since I don't have much patience and I wanted to try it now, I have made mega nuggets or mini burgers. Brown in the oven with a 200 broiler, turning them, about 8-10 minutes per side and drizzled with a spray of oil. Accompanied with a cheese salad with roquefort vinaigrette. Great! Continue with the leveling of the recipes 🙂
