We have already started with the school routine and what it entails: the lunch that the children eat at mid-morning. With homemade cakes like this we can give the little ones a joy from time to time fleeing from the industrial bakery.
Today's is a sponge cake in the shape of a plum cake ideal for the breakfast, either at home or at school. I have put some pieces of Pears in wine I did following the steps of the apples in white wine, but you can substitute this ingredient for chocolate chips or candied fruit.

Feather-shaped sponge cake perfect for breakfast. Contains pieces of pears in wine although they can be substituted for chocolate chips

Ingredients

  • 150 g of sugar
  • 4 eggs
  • 150 g of sunflower oil
  • 40 g of rum (can be substituted for juice)
  • 120 g of pastry flour
  • 50 g of cornstarch
  • 1 envelope of Royal type yeast
  • A few pieces of pear in syrup (optional)

Preparation

  1. We turn on the oven at 160º.

  2. We put the sugar in the glass and program 10 seconds, speed 8.

  3. Add the eggs, oil and rum. We mix 20 seconds, speed 4.

  4. We add the wheat flour, the cornstarch and the yeast. We integrate everything by programming 50 seconds, speed 4.

  5. Smear with oil a mold of plum cake of approximately 22 x 12 x 7 cms. We also sprinkle a little flour. We put in it the mixture that we just made.

  6. If we have, and we feel like it, we put a few pieces of pear in syrup on the surface (as the mixture is quite liquid, you will see that, once baked, those pieces will be at the base of the cake)

  7. Bake at 160º for approximately 50 minutes, until you see that it is cooked inside.

Notes

Pear in syrup can be substituted for chocolate chips or candied fruit.

    This afternoon I have made it, with chocolate chips and I have changed the rum for Mistela, it is delicious, thanks for the recipe 🙂

    Hello!!! I know by mistela a homemade liquor that is made with rum or also with brandy, sugar and flavors! It starts to marinate fruit peels (orange, lemon, pineapple etc)
