Am Ascend and with this typical Italian recipe I'm going to make my debut on the blog.
I am currently living in Italy so I will be alternating between the recipes that I have always made and the ones that I am learning now. I hope you like the idea!
We started with something simple that maybe some of you have already tried: Tagliatelle alla carbonara but with egg, without cream. You will see that the recipe that I put here has 4 eggs but if you have cholesterol problems, or if you want it to be less caloric, you can reduce the amount. If you prefer it to be even lighter instead of bacon or bacon, you can add cooked ham (I have done it with the latter, which is what I had in the fridge). Oh, and if you don't have Parmesan, you can put cured cheese on it, which is sure to do well too.
Although you could also cook pasta in Thermomix, for this recipe it is convenient to do it on fire. In this way we can mix it, freshly drained and still hot, with the sauce and with the egg that we have just pasteurized.
The traditional recipe calls for raw eggs but I have added a step to pasteurize them with the Thermomix (like this we minimize the risk of salmonellosis). If you prefer to make the traditional dish, you just have to skip the step of heating the eggs. In any case, it is important that you consume this dish immediately after its preparation.

I make them with Serrano ham and without cheese…. It is not the same but you have to settle!
