Cloud cake

The taste of this cloud cake It reminds me of the creamy strawberry ice creams like the Frigopié® that I had years ago.

I never thought that with a few simple sweets, in this case clouds, a cake would come out rich and so pretty. It is very consistent despite not having curd envelopes or gelatin. The combination with the cookies is perfect and I assure you that the children they love.

It was not a children's cake what I was thinking of doing, but a friend asked me to make it and test it to see if it was good and give it to her niece for her birthday. The truth is that I was surprised and we liked it a lot. I recommend it to you.

      Hi Petry. I think the problem is the cream. I mix the cream in a blender or in the Thermomix (I always make 500 gr. And what is left over I use for coffee with cream, to decorate,….). The cream puts it in the refrigerator but it stays perfect, just like when you make cream with strawberries and put it in the fridge. Cold cream is the best hold, so I don't understand how it got so hard on you. I think the cream was not good. All the best.

      Ah, I forgot! When you mix the cream with the cloud cream, it melts and remains as lumps. You keep mixing until everything is well integrated and almost no cream is visible.

    yesterday I made this cake !!
    To whip the cream, I put it in the freezer for about ten minutes so that it was very cold and I crushed some ice in the thermomix to cool the glass. I added a spoonful of Philadelphia cheese to the cream and it was perfect!
    It is very good !! I did not put Oreo cookies, I put some cupcakes that I had on hand, but it is still delicious!

      Hello Enric, I have that color left when I only add pink clouds, if they are bicolor, it doesn't look so pretty. There are candy stores that sell them like this, also the Aldi, I think also. In the Alcampo, white and pink come but each cloud has a color and I choose only the roses. The Mercadona ones are bicolor but you can entertain yourself by cutting them to separate the colors and add only the pink part. All the best.

In the first part, it is about giving heat so that the clouds dissolve, then the juice is added and as the clouds cool, they thicken again and it remains like a very light cream. Once we put it in the mold when cooling it has to be completely curdled, as in the photo. I think it will curdle in the refrigerator but if you want to be sure, you can put two or three gelatin sheets to soak in cold water, warm the mixture a little and add the drained leaves.       I use Vandemoortele's cream and, honestly, it never fails me. Although I have also used other brands such as Mercadona or Central Lechera Asturiana but I think the problem is not in the cream but in the order of doing things.

      If your cream is hard in the fridge, why not try making the cloud cream first and then the cream? I also advise you not to let the mixture cool completely so that it does not set.
