Callos a la madrileña

I wanted to make these tripe Madrid-style! Whenever my husband's grandmother makes them, I grab a couple of airtight containers and freeze because we like them a lot.

The truth is that I did not think that they could be so rich, but it is like this. My husband liked them very much and he is already telling me that I have to do them again. They also have a sauce so rich that it is impossible to stop dipping bread.

I buy the tripe already cooked, what they come from vacuum packed in its jelly. Before starting the recipe, I put them to heat in a saucepan so that the gelatin melts. I strain them and reserve the broth to which I add a little water so that it is not so gelatinous. This is the broth that I have used for the recipe. Another option is to buy the fresh tripe and cook it.
