Aubergine black pudding

La aubergine black pudding is a very rich and easy appetizer. It can also be easily decorated with pine nuts and cherry tomatoes.

It has an intense onion and eggplant flavor that it goes well with any type of bread especially if it is toasted and crunchy.

I have done it several times, especially when I have vegan guests. It can be done in advance and keep in the fridge since it does not lose any flavor and thus we can advance work.
