Lactonesa (mayonnaise without egg)

Thermomix Lactonesa recipe

Today I bring you a recipe that has given me some peace of mind this summer. It is about lactonese and for those who do not know what it is, I will tell you that it is a Eggless Mayonnaise.

It is ideal for heat because, by not using eggs, we don't have the danger to be able to catch a salmonellosis. The egg is replaced by milk and can be cow or soy. So it is also suitable for vegan diets.

It is very similar to mayonnaise, even at home if you did not count that it did not have an egg or they did not find out. I have prepared it on several occasions To accompany salads, pudding, stuffed eggs, Russian salad… With a result just as good as with traditional mayonnaise.

It is very simple to prepare and can take a few 3 or 4 days in the refrigerator tightly closed.

Hello, this is the only recipe that resists me in the thermomix. I've tried it 4 times and it always cuts to me, and I can't fix it. I had heard that when pouring the oil, you had to fill the cup with water, so that it would have weight and the oil would enter more slowly. If it cuts me, what can I do?

    1.    Marilo said

Infallible trick: I was very runny and I solved it in one of the classes this summer. In the second step, do not press temperature again. 37º will continue to light because the glass is still hot, do not try to turn it off by pressing again because that way it will turn on again. Sometimes I put up to 400 of oil, but very mild sunflower or olive. It is the perfect recipe for summer. All the best.

Thank you very much Mariló. You are incredible!! the amount of tricks that you give us between each other. I will remember you the next time I do it. Rest assured that I will come to the recipe to see your comment.
        A kiss

Ana, in a thermomix class, I also heard about pouring water into the goblet so that it will not rise when you pour the oil and it will spoil.
The truth is that my lactonese has never been cut and I would not know what to say if it is cut. Let's see if someone sees your comment and tells us what they do.
      All the best

Good Morning! The only one that resists me is mayonnaise, that's why I always make lactonese, I don't know why. You are right Silvia, that if it is not said (about the egg) nobody notices.
I have read on FACEBOOK that Elena is leaving, a shame, I hope everything goes well for both of us, lots of kisses.

    1.    Silvia said

Thank you Begoña, for your words. Mayonnaise has also been cut at times, but it is not. I love how smooth it comes out.
      All the best

I have yet to do it! I have only done it once and it came out regular because I added strong olive oil and you were climbing the walls! Hehehehe I did not realize that we had to add sunflower oil hehehe, small technical failure !! So I have to repeat.

    1.    Silvia said

Irene, I make it with mild oil, not exactly sunflower and it comes out very rich. Try it and you will tell me. All the best

The mayonnaise and lactonnaise both resist me, I have left it as impossible and once it cuts me there is no way to fix it

    1.    Silvia said

Try Pepi again, with tricks like putting water in the cup or the trick that Mariló tells us in these comments. Let's see if it comes out in the end.

When the mayonnaise is cut, you empty the glass, add an egg and a splash of vinegar and beat again at 3, and you are adding what is cut little by little and always at 3

    Hello girls,
I was in a class at the recently bought thermomix center and they made this recipe, I have tried it at home and it comes out very well, I fill the glass with water when I put the oil on the lid that gradually enters the thermos and it comes out very well, ah !! They told me that it can also be made with soy milk, even though I haven't tried it, but it doesn't cut me down !!!!
    Kissesssss.

    1.    Silvia said

Thanks for your contribution Eva. I also want to try soy milk, which is what my daughters use.

I would love to know how to do a diet, because of the regimen and why is it cut sometimes?

    1.    Silvia said

I think I'm going to look for some mayonnaise for diets, it would not be bad to find it. And why it is cut, sometimes it is because the ingredients were very cold, we must put them at room temperature.

  10.   jubilant89 said

I have not cut it yet and I have been doing it for a long time, and I never do the water in the cup, I always do it with sunflower oil and it comes out thick, I have been told not to add the vinegar and it does not come out so thick , I'll try it, see ...

Hello, I have never made this lactonese and the truth is that it catches my attention but my problem is that I am on a diet, can it be made with skimmed milk? will it curdle? it's that I'm afraid to try it in case it cuts out and it's not worth it. If someone has done it, please answer me, thank you

    1.    Silvia said

Maria, I haven't tried it but maybe it will. If you dare, tell us.

  12.   Patricia said

Hi! I have been making lactones for years but with the mixer because my mother is allergic to eggs. We give older people the pick of a dijon mustard knife. With the mixer, it is not necessary to heat it, it is made like mayonnaise, but changing egg for milk, without more. I'll try to do it with the thermo. By the way, María Teresa, I always do it with skimmed or semi and it has never been cut

Thank you very much Patricia for clarifying the doubt, I want to try one day to make it to see how it works. I will tell you the result.

Hello ... today I made lactonesa and it came out exquisite, as I added walnuts and it came out really good. A greeting and thanks for all the recipes you offer us.

  15.   Gisela said

How long can it be kept in the fridge?

    1.    Irene Arcas said

      Hi Gisela,
As it does not have an egg, it can last you in an airtight jar in the fridge for about 5 days. Thanks for writing to us!!
