Lemon muffins

For breakfast these lemon muffins are delicious. They are very fluffy And with the amounts that I put in, I get about 15 muffins, so I have enough for the whole family.

My daughters like them a lot, especially wet in Cola-Cao. Although later I have to strain it because they do not like to find any piece when drinking it (for me, that is the best).

Lemon muffins they are the most classic, But if you want to try others that are also very tasty, I recommend the orange with chocolate.

How cute your girls, hahaha !!! The same thing happens to me, I can't stand crumbs, but so much so that I prefer not to wet them, I like them better that way.

    1.    Elena said

Well, the opposite happens to me. I love to find the chips when I have coffee. But I think they are delicious anyway.

  2.   Patricia Munoz said

I join the club, I disgust the crumbs in the milk, hahaha, what a pint they have those muffins, can you give me one that I'm having coffee ??

Hello, and what are the chocolate ones? , Thank you. Any biscuit can be made in the shape of a cupcake or rather in muffin molds ?. Thank you

    1.    Elena said

Hi Juana, of course you can use the dough from a sponge cake and pour it into muffin molds. But, it's true, we haven't posted some chocolate muffins. This weekend I make them and prepare the recipe and the photo. Thanks a lot.

Hi, I'm new to writing, although I've been making your recipes for a long time and the truth is, they are all delicious, but I have a question ,,, I'm going to make the cake type muffins, how long do I have to keep it in the oven, only 15 min ?, seems like a short time ... thank you

    1.    Elena said

Miriam, when you say cake type, do you mean like a sponge cake? If so, you have to keep it for 30-40 minutes in the oven or until you see that it has risen enough and is golden brown. I hope you like it. All the best.

      1.    miriam said

YES, CAKE I MEAN TO PUT THE DOUGH ON THE OVEN TRAY, BUT I MADE IT AND IT STAYED VERY LOW, IT DIDN'T RISE, EVEN THOUGH THE FLAVOR WAS GOOD, (I DIDN'T OPEN THE DOOR OF THE OVEN OR ANYTHING, I DIDN'T GET IT UP, THANK YOU)

        1.    Elena said

Hello Miriam, you have to put it in a small mold, because otherwise it will be short. Try the muffin molds, you'll see how delicious they are. All the best.

The muffins are very tasty, I had never made them with any cream and they are delicious ... What is the best way to preserve them? Cover them with transparent paper and at room temperature?

    1.    Elena said

Hello Susana, I keep them in well-closed bags, I generally use Albal brand freezer bags, which close very well and thus do not get hard. Greetings and I'm glad you like them.

  11.   pink said

Why are the muffins lowered at the end of cooking? Thank you

    1.    Elena said

Hello Rosa, if they get off it is because they lack oven time. Try leaving them for a few more minutes, I think they will fit you well. All the best.

  12.   cristina said

Hi there! Congratulations on the web, the truth is, it's great.
This afternoon I have done them and they have almost all finished, they are very good.
The only thing is, I have two doubts, the first is that I have been a little dry, I suppose it is an oven issue and not ingredients.
And the second is, what do I want to do for a nephew who is allergic to citrus fruits, I remove the lemon peel and that's it? can I add chocolate chips?
Thank you very much and especially for posting such delicious recipes!

    1.    Elena said

Hello Cristina, I'm glad you liked them. If they dry out, it is because they have passed their oven time. And for your nephew, you take away the lemon and if you add the seeds, they will be delicious. All the best.

  13.   mila said

Hello, when you say that the cake goes down because it lacks cooking time, can it be put back in the oven for a few more minutes? Thanks.

    1.    Elena said

Hello Esteponera, even if you put it back in, it no longer rises, once the oven process is interrupted it no longer rises. All the best.

  22.   ROCIO said

Hello again! I made the orange and chocolate muffins and they were delicious. Now I'm going to cheer up with these! I would like to know if by doubling the amounts, the times increased only a few minutes or also double?
It is that your muffins are so successful that I have to make for my mother and my sister!
    Thanks a million

    1.    Elena said

Hi Rocío, I think doing double is going to be too much of a batch. I recommend you make the quantities of the recipe so that it is kneaded well. That is, do two batches. Greetings and I hope you like them.

  23.   Irene said

Hello Elena! I'm writing to tell you that yesterday I made your cupcakes and they came out fantastic. The first cupcakes that go well! The only thing is that they had an aftertaste of sunflower oil, maybe I added more than necessary. But they were delicious.

At home we are trying not to buy any industrial pastries, so I am looking for recipes like crazy. And my boy loves sweet breakfast so I said cupcakes! We have loved it. Thank you for the recipe. Of course, he has already told me to add more sugar next time (but how are they so sweet ?!).

As soon as I upload it to my blog I will let you know so you can see them.

Hi there! I have finally decided to make this cupcake recipe. They have a pint ... but I have a question: is the cream to whip or to cook? All the best.

  29.   marini said

Hello good morning, I am going to make the muffins for breakfast since they have a barbaric look, but I have a doubt, the other day I bought some silicone molds and I have never used them, are they used the same way that the d paper d all my life? All the best

    1.    Elena said

Hello Marini, they are used the same as the paper ones. I like to put a paper mold inside the silicone one and then I pour the dough, so they are well closed and in a paper mold. I hope you like them. All the best.

  30.   MARIA said

Hello Elena, what a pint k have the muffins. One question, can they be asked if sugar? For my father k is diabetic.

    Thank you

    1.    Elena said

Hi Maria, you can substitute sugar for sweetener or fructose. I hope you like them. All the best.

  31.   fineness said

Hello!! They are so good that I have done more and I have distributed by the neighbors of my town !! The only thing is that instead of getting up and staying in the shape of a cone they flatten me and they come out of the edges of the mold. I tried to give it more time but they burn me. What yeast do you put in it? What can I do to make me have the shape of the cupcakes of a lifetime?

    1.    Silvia said

A trick to make them rise more could be to let the dough rest in the fridge for half an hour. That you preheat the oven to 210º and when you are going to put them in, lower it to 180º with heat down for 10 minutes and the last 5 minutes up and down. Another tip is that you put the cupcake on its paper and put them inside a baking tray of cupcakes, so they do not spread because the mold holds it.
Try those little things and you will tell me.

Hello friends, it is the first time that I make muffins, it is a very simple and fast recipe, and they have come out very rich, except that instead of putting pastry flour I put wheat flour, I think the difference is that they have come out less fluffy, right? Should I have put less amount of flour? but otherwise they are very good, next Tuesday I will do them again with my son to take them to school.
Thanks for all the easy recipes that you put in, the truth is that I use the thermomix little but it makes me want to do them all.

  33.   beli said

Hi, I just made the muffins and although they taste great and fluffy inside (this is the first time I get it since they always remain hard as a stone) the edges have been hard. Do you know why this happens?
    Many Thanks

    1.    Irene Thermorecetas said

Hello Beli, I would tell you that it is due to overbaking, that is, you have left them too long and it has dried too much. Try putting less time on them next time. The muffins are complicated because you have to get the point, if we cook them too little they will go down, but if we cook them too much they will dry out, so it is practice to get the point. Lucky!

I read all the comments and answers BUT NOBODY asks WHAT AMOUNT of YEAST contains that half on the recipe Why not specify it if this is VERY IMPORTANT how can they ignore it? I await your answer ... Thank you ...

    1.    Ana Valdes said

Hello Ana. It is not specified because all the yeast sachets have 15/16 g. Just put 8 g. A hug
