I'm not from Madrid but my husband is. The first times I went with him from tapas in MadridHe took me to "La Cava Baja", what a marvel !. And the first dish we ordered was "potatoes with broken eggs." Since then it has been one of my favorite dishes and as soon as we can we like to go around the area to have some tapas and have these potatoes.
This recipe, made with basic ingredients, reminds us of those moments and is a Dinner that we love for its simplicity and flavor.
I have made the recipe several times; a few times I added sausage and other ham cubes and both are very good and very tasty.
Potatoes with broken eggs and chorizo
