Quesada Pasiega

The quesada pasiega is my favorite sweet. I have to say that I am from Torrelavega - Cantabria and that this is a typical candy of my land. For me it is delicious and it is worth as dessert, breakfast or to have a snack with a good coffee ... well, I think I see it as exquisite for any moment.

The real quesada is made with “rennet” from cow's milk, but since I don't have it here, I make this very simple version and very easy that it resembles the authentic one and serves to calm my craving to eat quesada pasiega.

I encourage you to try it because it takes very little time to make, the only thing it requires is a little time while it bakes but the wait is well worth it.

I usually take it without any accompaniment, I cut a piece and to the mouth. If I have guests, I accompany it with a little melted chocolate and let each one add if they want.

Sorry, at what temperature do I have the oven for an hour?

    1.    Elena said

Hello Afrika. You have to put the oven at 180º. I hope you like it. Greetings, Elena.

Hello Elena, I have the quesada in the oven, let's see how it fits me….
I thought this would have some cheese on it. Is there any other recipe similar to this but with cheese?

    Greetings, Ana

    1.    Elena said

Hello Ana, the real recipe is with cheese, but looking into quick and easy recipes I found this one that I liked a lot at home. I have prepared to post on the blog a recipe for quesada with fresh cheese, I think you can see it this month and that it is delicious, very similar to the authentic one. I hope you like it, you will tell me. All the best.

Hello! There is no quesada with fresh cheese around here, right? I want to make this recipe, but I think it would be better one that has cheese, but I only find this one.

    Hello girls
I have made the quesada several times and it is a little dry
    what will it be due?

    1.    Elena said

Hi Conchi, I guess it's from too much time in the oven. Each oven is different and the same in yours is made before. Next time leave it for about 10 minutes less, check that it is already done and if so, it will fit you better. All the best.

  5.   conchi said

    Hello girls
I wrote to you because I made the quesada several times
and it came out very dry
    what is due?
And how is the mold in which you do it?
And if I want to make it bigger, what should I take?
    all the best

    1.    Elena said

Hi Conchi, I use a square silicone mold. If you want to make it bigger you can double the amounts and beat it for a few more seconds. All the best.

  6.   beatriz said

Hello, I have made the quesada, the problem is that it has come out very bland, which may be due. A greeting I love your page, I have it in favorites.

Hello Beatriz, do you lack sugar? If it is for flavor, you can add lemon zest. Greetings and I am very happy that you like our blog.

Hello, how do I have the cheese in the oven right now? I don't know if it would have turned out well, that has like syrup, I don't know if it will be like this or not. It is the second, I do, and the first did not go well. I had to throw it away. How does it have to be when you take it out of the oven, compact or soft?

    1.    Elena said

Hello Toñi, I hope it goes well for you, it has to be a little soft. You will tell me. All the best.

  12.   toñi said

hello girls this time it turned out great. I decorate it with a pokito of striped coconut and it is very good.

  13.   fran said

hello, it looks very good. Can it be made with skim milk or is it not the same?
    thanks and regards

    1.    Virtues said

HELLO fran, it would be a matter of testing. I do it a lot, and once I did it with semi-skimmed and it turned out well.

  14.   Paloma said

    Hello
I have a question as to the amounts I need to make the quesada.
We are going to be about 12 people and I have a mold that measures:
    22cm x 30cm x 5cm
Do I have to use double the amounts?
    Thank you

ps: for those who are left hungry I am going to make your chocolate orange muffins. Slurp

  15.   viviana said

I have put all the ingredients and their right amounts and after an hour and a half in the oven it has not set yet, I have taken it out of the oven and it looks like a puree, has this happened to someone?

    1.    Virtues said

Hello Viviana, it takes a long time to set, so it depends on the ovens, also in which type of mold you have made it, I used to make it in an aluminum one and well, then I started to make it in silicone, and it has not gone too well, it was not done well….

  16.   Monica said

Does the oven have to be up and down, or just down ???
    Sorry beginner questions …….

    1.    Irene Thermorecetas said

Hi Monica, the oven is up and down and if you see that it is getting too toasted on the top and it is still too early to remove it, cover it with albal paper and let it finish cooking. When it's ready, remove the paper and let it finish browning on top. Lucky! The fact is that each oven is different, and there are ovens that burn immediately at 180º and others that do not even brown. So it's a matter of knowing your own oven. You will tell me!

      1.    Monica said

Hello, I have put it up and down without air, I do not know why it started to grow and the mold was small, but it did not come out, I put a large round silicone mold but it fell short, but it tasted great, thank you very much for your answer.

        1.    Irene Thermorecetas said

Hi Monica, well maybe you should put a bigger mold next time. I'm glad it looked good on you! Thank you for your messages.

I have made it perfect a few times already, when I put it in the oven I sprinkle a little cinnamon on top and it remains with a perfect presentation. It is said by another from Torrelavega. Thank you for making things so simple.

  18.   SILVIA said

    Hello,

Right now I have it in the fridge, because my little ones already want to give it a bite, it is the second time I do it, and it will not be the last, at home, they demand it a lot from me !!!, Thank you for your recipes !!

    1.    Irenearcas said

How good Finita! You will tell us how it turned out for you. Thanks for following us!

  20.   Irene Arcas said

    Hello Helena,

this looks like it lacked more oven time. We set an approximate time, but each one must adapt it to their oven. Did you prick it before you took it out? This is the trick to know if it is or not. If when you take out the toothpick or the knife it is very wet, you still have to leave it because it is not made on the inside (even if it looks like it on the outside).

When this happens to you, that is, it is already done on the outside but not on the inside, cover it with white paper so that it does not burn and can continue in the oven for more minutes.

You will tell me!! Do not be discouraged, you will see how the next time it will be perfect. It has also happened to me to take a cake ahead of time and when it got cold ... bbuuuuffff it deflated and was raw ... in the trash.

    Thanks for writing to us!

THIS RECIPE IS MISSING THE CHEESE, NO?

    1.    ascenjimenez said

      Hello Silvia,
It's funny, isn't it? It's called quesada and it doesn't have cheese ... Authentic quesadas pasiegas don't have it. Go ahead and try it by following our recipe and tell us what you think of the result!
      Kisses!

I already tell you, because otherwise it is not quesada. Even though I'm from Philadelphia

      1.    Irene Arcas said

Hello Silvia and Javivivi, this quesada recipe does not have cheese. It is true that there are other versions where Philadelphia type cream cheese is put on them, but this one does not have it. Thanks for your comments!
