Spaghetti carbonara

This is one of the favorite dishes from my husband, well and mine too. It is very easy and quick to do and the result is great.

Even from one day to the next they are very rich. I usually make them for lunch, but there are always leftovers and my husband takes them during the week (I eat at work and he at home, what luck!) And he says they are still very good.

La authentic recipe it has an egg but this version is different and suitable for egg intolerant. It is from the basic Thermomix book.

    Hello Elena!!! I do not know much about Italian cuisine, but my sister who was in Rome on Erasmus (who by the way is called like you) put her hands to her head when she saw me prepare the pasta like this, the carbonara does not have any cream in it !!! just an egg and the pancetta ... look at it on the good side, less calories for the body!

    Thank you for giving us the recipe without eggs, because the truth is that at home we like it with liquid cream (although it is not the authentic Italian recipe) I only made the spaghetti carbonara once in Thmx, the rest always in the pot! !!

    I live in Italy, and it is true that carbonara is prepared with eggs, that is, they are actually made with beaten eggs and it is put in once we remove the pasta from the heat, to prevent it from setting!
    Anyway, so it is great too. Try with the cream and a little natural tomato or even fried, just a little ... it is a delight !!!

      Hello Estefanía, they can be frozen, but when defrosting and heating them, do it slowly, warm them little by little so that the cream stays well. All the best.

    I just made them, they look exquisite but I have two dudillas, as there are two of us I have cooked less pasta, the sauce could be frozen for another day. And on the other hand, it seemed like a great idea to microwave bacon but I would like to know if greaseproof paper is essential and where you can get it.

      Hello Toñy, yes you can freeze the sauce and the vegetable paper is available in almost all supermarkets. It's called greaseproof paper or parchment paper. I buy it at Mercadona. You can substitute this paper for a few kitchen papers. You put about 4 or five below and another as many on top. Greetings and I am very happy that you like our blog.

      Hello. I have tried it today and for some reason when I put the water, with 1100gr the glass has already been very full. So later I have only put 250gr of pasta, but even so it has come back a bit. What have I done wrong? I have checked the amounts and would say they were fine. Even so, they have been good, the sauce a little liquid.

        Hello Cándido, it is normal that when the pasta is cooked, when boiling with the beaker in place, it may overflow. When that happens to you, remove the glass and add a splash of olive oil and continue cooking without the glass. Tell me how about next time! This carbonara recipe is delicious, really.     Great !, but I made a small change to lighten the recipe and they were a success: you see, I changed the cream for evaporated milk, ideal milk, and the result was scandalous. Encourage you to try the change, much lighter, and flavor, very good.

    ummmm… what a delicious thing !!!! I just picked up the kitchen, which incidentally, with the thermomix I finish in a plis plas, and I have made this recipe that I saw this morning. My people loved it ... like they were fighting over what was left over to eat tonight or tomorrow. I imagine that even if they are not eaten at the moment they will stay the same, right? The only thing I changed was the bacon for serrano ham, since my husband doesn't like bacon… .and it was great. A big kiss and keep it up ...

    Hello Elena !! I made the macaroni with the sauce, the truth is that it is very good but it is very liquid and I like the sauce a little thicker so that it is well impregnated in the pasta.       Hi Maite,

      I would modify the times but I would not double them. I would prepare it as follows:

      Put the onion, butter, oil, bacon and a little pepper in the glass. We grind 20 seconds, at speed 4.

      We lower the remains that have been on the lid and on the walls of the glass, with the spatula.

      We program 9 minutes, varoma temperature and speed 2.

      Add the cream and grated cheese. We grind for 15 seconds, at speed 7 and program 10 minutes, temperature 100º and speed 3.

      We test to see if it needs salt and if so we add a little. We reserve the sauce in a bowl.

      The rest of the recipe would leave it the same.

    Yes, it is thick, but if you like it lighter you can add a splash of milk. I love it, in fact, this Saturday we have prepared it to eat. Delicious !!

    MADRE MIA !!! I JUST MADE THEM IN A MOMENT OF NOTHING AND THEY ARE LOVELY !!!! I VARIED THE RECIPE A LITTLE ADDING INSTEAD OF 500 ML OF CREAM, 350 OF SKIMMED MILK WITH A LITTLE OF FLOUR TO BIND, AND SO THEY ARE A LITTLE LIGHT ... HAHAHAHAH !!! THANK YOU FOR THE RECIPE

    Hola!
    In the recipe it is necessary to put a reverse turn when adding spaghetti xq if they are not crushed a lot.
