You know the traditional Italian dish called pappa al pomodoro? I would translate it as soup, porridge or tomato puree and he is so well known in Italy that there is even a children's song dedicated to him: long live la pa pa pa pa… col po po po po po po pomodoro…

I show you this recipe because it seems to me a great way to take advantage of the tomato season and to take advantage of the bread that we could have left over at home. It is usually made with bread Tuscan (without salt) although, of course, we can use whatever we have.

The boiled egg is my contribution. At home we really like this and I usually add it to make it an even more complete dish.

This tomato soup is a great Italian recipe to spend the day before's bread and to enjoy the tomato season to the fullest.

Ingredients

• 50 g carrot
• 90 g onion
• 2 cloves of garlic
• 20 g of extra virgin olive oil
• 390 g tomato pulp
• 1 pinch of sugar
• 400 g of vegetable broth
• Sal Island
• 100 g of bread from the day before

Plus:

• Toasted bread
• Some basil leaves
• Extra virgin olive oil
• Hard boiled eggs (optional)

Preparation

1. We put the carrot and onion in the glass. We shred programming 5 seconds, speed 7.

2. Add the two peeled garlic cloves and the 20 g of extra virgin olive oil. We program 3 minutes, 100º, speed 1.

3. We remove the garlic cloves.

4. We add the tomato pulp, the sugar, the broth and the amount of salt that we consider. We program 10 minutes, 100º, speed 1.

5. At that time we cut the bread (as if it were for garlic soups) and, after the programmed time, we put it in the glass. We program 10 minutes, 100º, left turn, speed 1.

6. We serve with toasted bread, fresh basil, a drizzle of extra virgin olive oil and, if we want, with hard-boiled egg.

Notes

It can be made with natural tomato, peeling and draining them slightly.
