I have called them village cookies because they are reminiscent of the ones they sell in the ovens of our beloved towns. They are ideal for dipping in milk, hence they are perfect for breakfast. 

They are made with lard But don't be scared by this ingredient: its flavor is not noticeable and it provides the perfect texture to types of sweets.

I have flavored them with Orange Peel. What do you prefer the lemon? Well, you just have to replace the skin of one citrus fruit with that of the other. Of course, remember that you have to use only the orange or yellow part, never the white, to prevent the cookie from becoming bitter later.

Ingredients

For the cookie dough:

  • 400 g flour
  • 125 g of sugar
  • 50 g of butter
  • 60g milk
  • 2 eggs
  • 1 sachet of backing powder
  • The skin of 1 orange, only the orange part

For the surface:

  • 1 beaten egg
  • Two or three tablespoons of sugar

Preparation

  1. We put the orange peel in the glass. We program 10 seconds, speed 8. With the spatula we lower the grated skin that has remained on the walls of the glass.

  2. We add the flour, the butter and the sugar. We program 30 seconds, spike speed.

  3. We put the machine in spike speed and, little by little, we add the milk, the eggs and the yeast.

  4. Let the dough rest for about 15 minutes, either inside the glass or in a bowl.

  5. After that time, we put baking paper on a baking tray and we form the cookies, taking portions of dough of about 25 g and giving them an elongated shape. We place them on the baking paper, leaving a separation between them (two trays are needed).

  6. We paint the surface of each cookie with beaten egg. Next we put a little sugar in each of them.

  7. Bake at 190º (preheated oven) for 10 or 15 minutes, until golden brown.

      Hello, María Pilar. It is put before baking them, we paint the surface of the cookies with the beaten egg and sprinkle a little sugar on top. Now I add it in the recipe. Thank you for your comment 🙂
