Wholegrain prune muffins

If you like integral and fiber-rich pastries, you have to try these wholegrain prune muffins.

They are not exactly light because butter and sugar are not lacking ... But we are going to make them a little healthier using cane sugar and enriching them with fiber of whole wheat flour and prunes.

You will have them ready to eat in just 30 minutes. With the ingredients that I put in the recipe they come out few units (approximately 8) but if you want to do more you just have to multiply the quantities by two.

If you are interested in trying other muffins, I recommend the orange and chocolate.

They are rich in fiber thanks to the whole wheat flour and prunes and, thanks to the butter, they provide the necessary energy to face the day.

Ingredients

• 70 g butter at room temperature
• 100 g of cane sugar
• 2 eggs
• 50 g whole wheat flour
• 50 g of pastry flour
• 1/2 envelope of yeast type Royal (8 g)
• 40 or 50 g of chopped prunes
• A little white sugar for the surface

Preparation

1. We preheat the oven to 180º.

2. We put the butter, sugar, eggs, flour and yeast in the glass. We program 20 seconds, speed 4.

3. Now add the prunes cut into pieces and pitted. We program 10 seconds, turn left, speed 3.

4. We fill the molds to 3/4 of their capacity. We put on top white sugar moistened with a few drops of water or lemon

5. Bake at 180º for approximately 20 minutes.

Notes

There are about 8 units. To make more, we just have to double the ingredients.[br][br]If you don't have prunes, you can replace them with raisins, although I recommend that you try it with prunes.
