We have made an exquisite sponge cake with a pleasant flavor of yogurt and coconut. To give it a special touch we have decorated it with apricot apricots to be able to make individual portions.

Yogurt cake with apricots
A delicious cake made with yogurt and coconut with a very juicy finish. We will decorate it with apricots to be able to cut into portions and make individual packages.

Ingredients
- 12 apricot dried apricots
- 2 tablespoons sugar
- 2 eggs
- 150 g of natural yogurt
- 110 g of sugar
- 160 g wheat flour
- 20 g of grated coconut (optional, can be substituted with almond flour or wheat flour)
- 80 g butter, melted
- 6 g baking powder
- a tablespoon of oil or similar to stick the paper in the pan
Preparation
We put the dried apricots to cook with our Thermomix. We place our basket in the glass, put the dried apricots, add the two tablespoons of sugar and cover with water. We heat for 15 minutes at 110 ° at spoon speed. We drain the apricots and set them aside.
In the same glass without cleaning we add the two eggs, the 110 g of sugar and the 20 g of grated coconut (if we do not add the coconut we can substitute it with almond flour or wheat flour). We mix it during 30 seconds at speed 3,5.
Add the melted butter and yogurt and mix for 15 seconds at speed 3,5. Finally we add the 160 g of wheat flour and the 6 g of baking powder. We mix during 20 seconds at speed 3,5.
Prepare a 24 x 24 cm square pan, spread it with sunflower oil and line it with greaseproof paper. In the video we have prepared we can see how we cover it with this paper. We dump our dough and place the dried apricots well aligned. We put it in the oven at 180 for 15 or 20 minutes.
When the cake is cold we can cut it into square portions and put it in cellophane bags. Each bag can be closed with a sticker and decorated with a string making a bow.
