Zucchini and leek risotto, lemon

Few are the ingredients that we are going to need to make today's video recipe. Our risotto has a zucchini, a piece of leek and a lemon. Do not forget to prepare a good vegetable broth beforehand (if you do not have it already ready) and to buy a specific variety of rice for Risotto.

On this occasion, to make the dish lighter, we are not going to butter it. Zucchini provides creaminess and that is why I have not considered it necessary. But if you still want to butter it, add a knob of butter or a little grated cheese at the end and mix everything delicately with the spatula.

    Hello Ascen, for two people, would you keep the same amount of leek and zucchini and put 175 grams of rice and the same volume of vegetable broth?

      Hi! you will have to reduce the broth as well. Put a little more than half the broth if you keep the grams of leek and zucchini. Another option is to cut all the ingredients in half. I hope you like it 🙂
