Since the presentation of the new guide on November 22, we are gradually getting to know the official list of the restaurants awarded with the new Michelin stars. Most of the winners recognize that the stars are not the main objective of their work but they know perfectly well that an award of this type can catapult them to glory. That is why they agree that it is a challenge that makes them be active and a reward for their effort, work and tenacity.
Every year hundreds of establishments are visited by the inspectors who evaluate them following the criteria established in the guide.
Although we must also talk about the important role that readers have since they provide valuable testimonials and a whole series of information that is taken into account for the elaboration of the visit itineraries.
The highlights of the 2018 edition
Without a doubt, the highlight of this edition are the new additions, that is, those new restaurants in the different categories.
They join the section of three stars the restaurants ABaC by Jordi Cruz and Aponiente by Ángel León. Both chefs have different approaches but without a doubt their execution and result has made the inspectors fall in love.
The new members of the section of two stars They are: Maralba by Fran Martínez, Dos Cielos by brothers Sergio and Javier Torres. Enjoy chefs Eduard Xatruch, Oriol Castro and Mateu Casañas. Coke from the Sandoval brothers and Cabaña Buenavista from Pablo González.
The following restaurants join the list of one Michelin star: Alevante, Bardal, Caelis, Enigma, Castell Peralada, La Candela Restò, Cebo, Amelia, Eneko, Sucede, Audrey's by Rafa Soler, El Rodat, La Bicicleta, El Doncel, Trigo , Kiro Sushi, Nub.
All these establishments are the new additions but there are many more restaurants that repeat category. So, if you want to be aware of all the data, it is best to get an authentic Michelin guide for Spain and Portugal 2018. Un good christmas present that fans and true fans will appreciate.
Undoubtedly those of us who are passionate about cooking have heard about these awards but really what do we know about this guide.
To delve into the subject a bit, we have compiled a series of data that you will surely enjoy anecdotally.
10 dates in the history of the Michelin Guide
1889. Date on which the company is created specialized in the manufacture of rubber balls, brake shoes and tires.
1900. The Michelin guide is born although it has a very different format than what we know today. At that time they were free, contained advertising and were, above all, a driver's manual with maps, instructions for changing the wheels, points for refueling and a list of places to eat or stay.
1910. The edition of the guide for Spain and Portugal.
1920. In this year stop being free and it is launched on the national market with a price of 5 pesetas. Another great change of this time is that advertising disappears from its pages.
1926. From this year the restaurants are rated by stars although at this time only a single star was awarded.
- This year, for the first time, restaurants are awarded with two and three stars. Since then categories are standardized as follows:
- One star implies "very good cuisine in its category."
- Two stars equals "excellent cuisine, worth a detour."
- Three stars means "exceptional cuisine, table that justifies the trip."
- The Spanish subsidiary of the French group opens. In other words, the entire process is developed and coordinated at the national level, although France is still the place of origin.
1936. A new stage opens since it is in this year that the applied criteria are published for the award the stars.
1955. The Bib Gourmand badge appears. A new list that distinguishes locals with “good food at a moderate price”.
2018. The Michelin guide for Spain and Portugal has 11 restaurants with three stars, 30 with two stars and 177 with one star. Also in the guide we can find a list of 289 establishments that are recognized with the Bib Gourmand. And another section called Michelin Plate, thus giving visibility to all the categories of the selection.
