Today I propose this garnish of eggplant with caramelized onion to honey. Is vegan and a great accompaniment to pasta, couscous or quinoa dishes. I recommend it as Garrison of this vegan croquettes. Delicious.

And if you are not vegetarian, try it with white meats.

    At what point does the onion meet the eggplant? Do you have to remove it from the glass to cut the eggplant?

      Hi Ana, in step 5 you add the chopped aubergine to the glass (which already contains the onion). You don't have to take it out 😉 Thank you for following us!
